I like using apple cider vinegar in canning because I like the flavor, and it comes from apples. Most white vinegar comes from a variety of sources, including wood pulp. I use it white vinegar for cleaning, but it can be substituted in canning recipes if you like. The pH is the same. Lemon or lime juice can also be substituted for the vinegar in this recipe – but they give a more pronounced flavor.
As with all canning recipes, this recipe has been developed and tested specifically to make sure the pH level is safe for canning. Don’t alter the amount of acidity (vinegar). You CAN substitute some of the vinegar for bottled lemon juice if you want to play around with flavor. Dried spices won’t affect pH, so you can also experiment with those, but the amount of vegetables and tomatoes and acidity need to stay the same. I have not canned this recipe in a pressure canner, but I have given details in the post above about steam canners vs. water bath canners. Please do your own research to decide what method is best for you.
The tomatoes you use should be able to stand up to the canning process. Good varieties to use (such as Roma or Beefsteak) have thick walls and less water than other varieties. Instead of buying them at the supermarket, I suggest buying them from a local farmer’s market. I picked mine up from an Amish community market – an enormous box full (that I could barely lift) for around ten or twelve dollars. (That being said, I had way more than the 15 lbs this recipe calls for, so I made more than one batch) If possible, buy all of your salsa veggies this way.
I also believe that roasting your tomatoes and onions gives the salsa a complexity of flavor. I prefer to roast my own tomatoes rather than buy canned roasted tomatoes. It literally only takes minutes. I like to roast the tomatoes just until they start to slightly char. I did choose canned diced chilies in this recipe only because I wanted a milder salsa with a hint of smokiness, but if you want a spicier salsa, leave out the diced chiles and roast a couple of jalapeños along with the tomatoes. Or you can even use both, totally up to you. Keep in mind though that jalapeños can range wildly in heat level, so I would try them before adding them to the salsa.

This salsa verde is fresh, bright and not too salty like those store-bought versions. I tried making it with raw tomatillos, but they’re borderline sour. Roasting them really brings out their best side. Tomatillos look like small green tomatoes with husks, but they aren’t tomatoes—they’re cousins. I’ve had an easy time finding them at grocery stores lately.
I tried https://great-salsa.com/category/fruit/ and loved it! I used one banana pepper, one large jalepinio (sp) and topped the rest of the cup with yellow peppers. I don’t care for green peppers so I just used one cup of them and the second cup of a mix of yellow and orange. I love garlic, so a added 4 cloves total. I used fresh cilantro and oragano. I chopped my tomatoes and tried to remove seeds and extra juice as I went along. It turned out fantastic. This recipe is a keeper. Thank you so much for sharing it!! 5 stars!!
I’ve been wanting to try canning, and this seems like a good way to try it. I love salsa and could put it on almost anything. In fact, one of my favorite busy night recipes is to put two chicken breasts and 16 ounces of salsa (usually one whole jar) in a baking dish and bake at 350 for 30 minutes. So easy and delicious. When using fresh chile peppers always taste first before adding! Some peppers are hotter than others and you really can’t tell unless you taste them. Just take a very small taste. You’ll be able to gauge the heat of the pepper and will be better able to judge how much you need.
I never make comments on websites but I have to say that this recipe is really really good! I had to stray a bit because we did not have enough tomatoes from the garden, so I added about 30-40% roasted Tomatillos. Next time I will go and buy enough tomatoes so I can triple the recipe. This really is the best canned salsa I have ever made by a long shot! Thanks for sharing the recipe.

Rachel, you can substitute jalapeños for the serrano chiles and get great results. Try the recipe with 2 jalapeños and if the salsa is too spicy reduce it to one. Removing the seeds and veins from the chiles reduces the heat too. Cheers!
This Homemade Salsa recipe is one that I’ve been using for many years. It goes together in a snap, and not only perfect to serve with chips for dipping, but it’s also great to add to your Mexican dishes. You can even top a burger with it, which would be perfect to serve at your next college football homegating party!
Niki, sorry for my delayed reply. I’ve been on vacation and away from connectivity. The cilantro is strictly for flavor so leave it out if you don’t like it. As for the celery, a little should be fine. Too much will change the Ph, which could mean unsafe storage. Just add a little extra lime or lemon juice to compensate.

Shannon, anaheims are very mild, and serranos are pretty hot. I fear that if you substitute the anaheims with the serranos, the salsa will be too hot to eat. It might work out if you take out all the seeds and white ribs/pith. Just be careful.
