What better time of year to make some fresh salsa than right now?!  As I’ve mentioned before, my husband and I were lucky enough to live in the heart of Mexico for a few months as part of an internship program.  Mexican food has always been one of my favorites, and I absolutely loved getting to know “true” Mexican food while we lived there!

Or I should use the plural and say “salsa-s”. Any decent Mexican dining establishment north of the border, whether a taco truck or full on restaurant will offer a variety of salsas to its patrons—tomatillo salsa verde, red chili salsa, and my favorite, a fresh tomato salsa otherwise knows as Pico de Gallo or Salsa Fresca.

If you’re looking for a fresh and flavorful salsa, this recipe is an excellent choice. The combination of diced tomatoes, peppers, and garlic make for a classic fresh salsa. Serve it with tacos, burritos, or as a party dip with tortilla roll-ups or tortilla chips. It is a very good condiment to serve alongside grilled or baked fish fillets, grilled chicken, steaks, and pork chops.

GREAT salsa recipe. My first time making salsa from my own tomatos and peppers, read many different recipes online and in books, decided to try yours first. So good!! This salsa is also amazing before it’s cooked. I filled a container and put it in the fridge and then cooked, canned four pints. Just personal taste, I cut way back on jalapeños, used about two, and really let’s the taste of the tomatoas and green peppers shine. Thanks very much for sharing this!

If you are canning salsa, is important to use recipes that are formulated and tested for safe home canning. Salsa recipes for water bath canning must meet acidity-level requirements to prevent the growth of botulism bacteria. This recipe is from the “Zesty Salsa” recipe in the Ball Blue Book Guide to Preserving. The only differences between the recipe below and the “Zesty Salsa” recipe is this recipe is cut in half. The ratio of ingredients is the same and maintains the proper acidity level required for safe canning.

I’m making your salsa today. Your ingredients are right on with the ingredients I use to make it fresh. The only difference for me is, I had an abundance of tomatoes this summer. I cored them and froze them whole. I just put them in my stockpot and will cook them down until the water is just about gone. I’ll use my emulsion hand blender to run through the peels. I’ll add the other ingredients after this, that way I still get a little chunkiness. I did the process yesterday with pizza sauce (canned) and used about 2 gallons of tomatoes. Turned out great.

Hello! Do you have a homemade canned spaghetti sauce recipe that you could share? I have made varying sauces throughout the years and have not found one that I love! If I were to buy a sauce in the store I would prefer Prego over any others, so that is the type of sauce I would like to can. Any ideas? Thanks!

I just made a double batch. I liked the look of the recipe, and just jumped in! We grow heirloom tomatoes, so I used green zebras, sunny orange ane black plums. Since they are much jucier than Romas, I drained off a lot of liquid and boiled it down, then added it at the end. Worked great. Thanks Katie

This was too spicy for me (not mild!) and very vinegar-y! I know the acidity is important, but tomatoes seem pretty acidic on their own, right? I’ll stick to my old recipe (which is time tested from my mother in law, but I’m not sure if it’s officially approved by a lab) but I do like your skin slip method. Took longer than 3 min for mine. And the less ripe store-bought Romas didn’t really slip off. Garden ones did, but they weren’t Romas.

IMPORTANT: Follow the directions carefully for each recipe. Use the amounts of each vegetable listed in the recipe. Add the amount of vinegar or lemon juice listed. You may change the amount of spices, if desired. Do not can salsas that do not follow these or other research tested recipes. (They may be frozen or stored in the refrigerator). Do not thicken salsas with flour or cornstarch before canning. Thickening makes it harder for the contents to reach the right temperature during processing and impacts safety. When I used a combination of Roma/paste tomatoes and everyday garden tomatoes (don’t know the exact variety, but in this batch, Romas probably made up about 1/3 of the total amount of tomatoes), I needed almost six pounds of tomatoes to equal 2 1/2 cups of drained tomatoes. That’s because my non-paste tomatoes have a ton of liquid that drains off. Today, I measured 2 pounds of JUST paste tomatoes (about 12-14 small to medium Romas from my garden) and after taking the skins off, crushing lightly and letting drain, I had a little over 1 cup of drained tomatoes to use for this salsa. I do tend to err on the side of over-draining, as an FYI.

yes you can tell if you have hot jalapenos if they are dark green they are hot so get the lighter green ones i know only because i made some salsa and didnt know why it was so hot .now i just buy the lighter ones hope that helps.

This was incredible to make. I’m so thankful I found this recipe. I did double it as I had enough tomatoes from the garden to do so. I even let them sit overnight in the fridge in a container to help them lose a bit more water content. I also used different peppers. I did half green bell peppers and half poblano. I didn’t have enough sweet bell peppers yet in my garden. I also didn’t have any jalapeños so I subbed in the heatless habaneros I grew just for the purpose of trying them in salsa. They were perfect. All the flavor of the habanero but none of the burn. Bought the seeds from Bakers Creek for those wondering about them. I’ve been asked by my family to forgo all of the chili sauce and stewed tomatoes I also make from my garden bounty and to just make the salsa. Thank you again for such a wonderful recipe. I have been going about it so wrong for years. 

Lift the jars out of the water and let them cool without touching or bumping them in a draft-free place (usually takes overnight)  You can then remove the rings if you like, but if you leave them on, at least loosen them quite a bit, so they don’t rust in place due to trapped moisture. Once the jars are cool, you can check that they are sealed verifying that the lid has been sucked down. Just press in the center, gently, with your finger. If it pops up and down (often making a popping sound), it is not sealed. If you put the jar in the refrigerator right away, you can still use it. Some people replace the lid and reprocess the jar, then that’s a bit iffy. If you heat the contents back up, re-jar them (with a new lid) and the full time in the canner, it’s usually ok.

For the first batch, I hand chopped all the vegetables, man was that https://great-salsa.com/blog/ consuming. The 2nd batch was much easier to manage solo as I used the food processor. Things went so much smoother. I’m not familiar with chili sauce and don’t think I know exactly what it is. I wish someone would would blog about it.

Use real tomatoes and all natural ingredients and you will get the best results.  I went to our local farmers market yesterday to grab some fresh tomatoes, onions, peppers, cilantro and garlic for this tasty salsa. Having a container of fresh salsa in the fridge makes me happy! 🙂

Thank you for sharing this recipe. We love it. And, I cannot tell you how excited we are to begin canning, today, for the coming year. I have to admit that we are thrilled to be making only this recipe. Needless to say – so are our tasters!

Today we finally had enough good tomatoes to make one batch of salsa. (My tomatoes and a few peppers got hit by End Bottom Rot and I hope I have it under control now.)  I will say this – if you want to make salsa – have enough ingredients and pans to make up 2 – 4 batches or more to cut down on your time in the kitchen.  By the end of next week we should have enough tomatoes to make the 2 – 4 batches at once but we were anxious to make our first batch today and patience is not our middle name.

I really believe that salsa is best when only a few key ingredients are involved. While there are literally millions of salsa recipes, many with dozens of ingredients, I still believe in my mantra, that simple is always best. For my salsa recipe I like to stick with the key ingredients, which in my book are tomatoes, garlic, onions, cilantro, chiles or jalapeños and a little bit of lime juice for some tanginess.

Arrange the tortillas in a stack and cut into 6 equal wedges. Pour about 1-inch of oil in a large frying pan over medium-high heat to 350 degrees F on a deep-fat frying thermometer. Fry just a few at a time, turning occasionally, until crisp and lightly browned, about 1 minute. Drain on paper towels; sprinkle lightly with salt, if desired. Store in an airtight container.

This is the best. I’ve made two batches and used Cherry Tomatoes from my garden. For the second batch, I added one extra teaspoon of Cumin and a little more hot peppers to make it hotter, more like a Medium hot. I also froze the salsa instead of canning it and used the Gladware containers. I had read a warning from the Cooperative Extension not to can salsa because the vegetables in it make it unsafe to can. I will make this salsa for years to come.

I read some comments below and came back for a quick reply.. I noticed someone questioning the sugar in the recipe. Please dont omit it. You cant taste the sweetness at all. It is necessary for the salsa to retain its color in the jars for a longer period of time. My late Mother was a GREAT home-,maker and I will never be quite as good a ‘canner’ as she was, but she swore that if you leave out the sugar, that the salsa will darken quicker.

I tried makin b salsa for the first time last year. I used the Ball recipe and it tasted so vinegary that it was thrown out. I want to try again as we eat a lot of salsa. My question is why the vinegar? Why apple cider vs. White or other types? Can that be substituted or a reduced quantity and still keep the pH level safe?

Excellent, simple salsa recipe! Fresh, in-season produce make all the difference and are absolutely critical in achieving a good outcome. There is no way this is flavorless unless flavorless ingredients were used. Tastes better the longer it sits. HIGHLY recommend!

I haven’t tried so I can’t say for sure what to do exactly but why don’t you just toss some in the blender with the other ingredients, blend, taste..and take it from there based on what you think the salsa needs. Pretty easy 🙂 Enjoy!
