Because this particular salsa is made with fresh ingredients, it will last as long as you would expect cut fresh tomatoes to last. It’s best eaten right after you make it, chilled it should last about 5 days or so.

Everyone loves salsa and I like your version a lot – I can make it now with canned tomatoes. I just made some tomato soup using canned tomatoes and it was delicious . Thanks for a great snack we all will enjoy (especially me) at FF #51 🙂
That said, I’ll be canning salsa again this weekend and intend to fully enjoy the finished product! Try making your own sourdough tortilla chips via the instructions at the GNOWFGLINS eCourse on sourdough (yum!).
Also, you can separately simmer black beans with a diced white onion until the onion is completely dissolved, along with salt and pepper. Mix that half and half with the cooked salsa, as well as a couple fresh avocados and you’ll have a salsa/dip that’s incredible with blue corn chips or pretty much anything else you can think of.
Don’t take the comment to heart about pictures. Put as many of those beautiful things on your page as you want. Load time has almost nothing to do with anyone’s “slow computer.” It’s internet connection speed. And nowdays 95% of the country uses high speed wired, wifi or at least 4G. Photo loading is not an issue.
The problem we had though, was what to do with the Tomatoes after roasting them, Typically other salsa recipes would remove the skin and seeds, but that seems kind of meaningless in this instance. Could you share your method here please?

Rachael, did you still put the full amount of cider vinegar into the batch of salsa and when putting into jars, individually add the lemon juice to each jar…if so, were they pint and how did this batch turn out? Thanks, Nancy

Fill inexpensive, reusable glass jars with Spring Salsa and chips for easy carrying. This colorful salsa of corn, tomatoes, and cilantro would be equally delicious served over salad greens or in warm tortillas with grilled chicken. COMBINE tomatoes, green peppers, onions, chili peppers, vinegar, garlic, cilantro, salt and hot pepper sauce, if using, in a large stainless steel saucepan. Bring to a boil over medium-high heat, stirring constantly. Reduce heat and boil gently, stirring frequently, until slightly thickened, about 10 minutes. Hello Marissa. Also tomatoes vary in how bright and vibrant they are, some are darker than others and then with the cilantro, that could be making the color darker. The vinegar in salsa also makes the consistency fluid enough for the heat to penetrate the bottle in the canning process.
