Am going to give this salsa a try as I do sometimes prefer the more saucy/less chunky variety of salsa to eat with tortilla chips. I wonder how people got on with canning it – did anyone ever come back with a report for you on that?

Hi Jami. I was wondering if after eating the salsa all winter you are still happy with the no peel/food processor chopping? Do you not notice the peels at all? I know when I miss a few peels making other things they kind of curl up and float on top. I made this recipe last year for the first time and love it! I have also been searching for a thick recipe and was also using the oregonian recipe so I was so happy to find this one. Thanks!

Hey Terry – just keep in mind that it isn’t recommend from a food safety standpoint to keep the jars at room temperature (on a shelf) without properly processing in a water bath, steam bath or pressure canner. Simply letting them seal from the heat of the salsa doesn’t preserve them properly. You can google some of the reputable canning guides for more information but I want to make sure I give that disclaimer so no one gets sick and comes back to blame me. 🙂

Looks like an awesome recipe; we’re trying it tonight. All of our garden tomatoes and peppers are ready for the task. I noticed that some folks were wondering about the tomatoe pounds to cooked cups conversion. I found out that 2 1/2 pounds (1.1 kg) tomatoes = 3 cups chopped and drained fresh tomatoes = 2 1/2 cups chopped and cooked tomatoes = 2 1/2 cups canned tomatoes in puree or juice. You can also substitute apple cider vinegar (ACV) for white vinegar. We mixed up the peppers too, since we like it spicy. Looking forward to a positive result. Try sliceing tomatoes and layering them in a colinder with salt between each layer. Let sit over night in a cool place (not in the frig.) covered with a cloth. Try an outside sink so the juice gets away from the tomatoes, then proceed with yoiur favoriate recipe.

Use real tomatoes and all natural ingredients and you will get the best results.  I went to our local farmers market yesterday to grab some fresh tomatoes, onions, peppers, cilantro and garlic for this tasty salsa. Having a container of fresh salsa in the fridge makes me happy! 🙂

Excellent, simple salsa recipe! Fresh, in-season produce make all the difference and are absolutely critical in achieving a good outcome. There is no way this is flavorless unless flavorless ingredients were used. Tastes better the longer it sits. HIGHLY recommend!

For mild salsa try hot peppers lower on the Scoville scale, such as poblano or even bell pepper. Remove all veins and seeds. Offer pickled serrano peppers to guests who enjoy fiery salsa. Buy an authentic brand such as Herdez.

4Ladle hot into clean, hot jars, leaving ½-inch headspace. Remove air bubbles, adjust headspace if needed, and wipe rims with a dampened clean paper towel. Adjust lids and process 15 minutes using a boiling water bath method. At altitudes of 1000 feet or higher, increase processing time 1 minute for each 1000 feet of altitude.

Sorry to hear that Jim. I don’t know what to tell you. You’re the first that I’ve heard with this issue. Did you use fresh squeezed limes or bottled lime juice? Bottled is more intense. Anyway, at 1/2 cup of fresh lime juice the flavor should be present but not overbearing. You can replace the lime juice with vinegar in the future if you’d like.

Blanch and skin the tomatoes. To blanch tomatoes, place them in boiling water for 30 to 60 seconds, until the skins start to split. As soon as the skins start splitting, remove the tomatoes and place them in a cold water/ice water bath. This stops the cooking so they don’t get mushy, and makes them cool enough to handle for peeling. Slip off skins.

It must be thoroughly heated through, so I wouldn’t do it less than 20 minutes – maybe that will be enough? You can always cut your vegetables larger so they stay through the cooking and canning process.

Sep 25, 2008 Very good! I was worried about the whole lemon but you did not taste any of the white bitter part of it. Our tomatoes were on the sweet side so our salsa had a sweet/warm taste to it. We’ll be making this one again. Made for *Zaar Cookbooks Tag 2008* game. *Update* I made this again today. This time I did not cod salsa recipe the ends of the lemon off up to the inside of the fruit, and I did not chop the lemon up as fine as the first time, both a mistake. So cut the pith off both ends and then grind/chop the rest of the lemon up fine.

I also referenced the Ball cookbook which states that fresh lime juice can safely be used in salsa recipes, and since I wanted a fresh lime trade in my salsa, I used only 1 cup apple cider vinegar and the juice from 4 fresh limes.

Combine whole tomatoes, Rotel, paste, onion, jalapeno, garlic, sugar, salt, cumin, lime juice, and cilantro in a blender or food processor. Pulse until you get the salsa to the consistency you’d like—about 10 to 15 pulses. Test seasonings with a tortilla chip and adjust as needed.

Made my second batch today.  First batch was a just over a week ago and yielded 8 jars.  It was quickly apparent this was not enough!! lol   Family is raving about this recipe.  I didn’t add the sugar either time, don’t miss it.    I used the jalepenos with all the seeds and membranes the first time.  Quite spicy but not unbearable.  This time around, I used the seeds and membranes from 3 of 5 of the jalepenos (per batch; I doubled the recipe this time, hoping to keep some in the house for more than a couple of weeks.)  It’s perfect to my taste.. probably a medium to hot level compared to store bought.     My family doesn’t like chunky salsa so I threw the tomatoes in the food processor for a couple of pulses, and used the food processor for the peppers, and onions.  SUCH a great tasting recipe.  All I hear are complaints that we keep running out of nacho chips 😉   Thanks for sharing!!

I made it tonight…tried some off the spoon ….pretty tasty…I added some Serrano peppers and more jalapeños to make it more spicy…hands are burning but my mouth is watering….thanks…used tomatoes from my garden

You need to taste it first, start with a smaller amt of jalapeños, take a couple of teaspoons of the mixture and place in a cup then put the cup in the freezer for 2 to 3 minutes- then sample…. If you like it then boil 20 to 30 minutes, if not then add more jalapeños and repeat freezer test until you reach the desired hotness. ( it tastes spicier when it is hot, that is why you do the freezer test. Works every time!
