It in never safe to eat salsa that has not been properly canned. Because it is not reheated before consuming it. It is eaten right from the jar.In the directions it says you do not need to hot water bath, or pressure can the salsa, that is false information, you need to can the salsa no matter whether the hot salsa will seal the jars. Canning the salsa insures that the seal will be strong enough and the salsa hot enough to kill the bacteria that can be in the jar. Please only can salsa recipes that that are proven safe, this one does not have enough vinegar or acid to deem it a safe recipe for canning. Would be good to freeze though. If you want to compare your recipe to a safe one look at a current blue ball book. tweaking the recipes are beer salsa recipe safe either. I know that you probably had no issues with what you ate,but it’s recipes like this that can cause harm to people who no nothing about canning! Salsa has a lot of non acid ingredients, that potentially cause the food to spoil if not prepared properly. I’m by no means trying to be mean, but trying to keep people safe. Food poisoning sucks, botulism can kill.

The way my husband says you can tell about the peppers is if they’re ‘woody’ like with lines on them, brown lines – not bad, just lines, that means they’ve aged more and are really spicy. I don’t use those, I give them to him to eat raw. Sometimes they’re even too hot for him.
I made this recipe for the first time last week and just finished making batch number 3 and 4! We LOVE it! And so do all of our friends! It’s so simple, delicious, and not to mention CHEAPER!! I always have most of these ingredients on hand anyway. Thank you!
Jarred salsa can be good, but let me tell you, making it fresh… whew… you won’t want jarred anymore. Fresh blows that out of the water. Plus if you’re into canning, I’m sure you could can this salsa yourself and have it fresh year round 🙂 You could also freeze it 🙂
Making this right now! Can’t wait to try it! I wasn’t sure if I needed to buy a yellow or white onion, but I went with the white onion. Hoever, I am bummed b/c i just realized I forgot the jalapeno and the lime juice.. Hopefully it still tastes as good as yours! Thank you for sharing!!
Why canned tomatoes? Quality canned tomatoes are picked at their peak and stay that way. If you can find fire roasted tomatoes awesome…if not this will still be delicious! You can always use the bounty from your garden in place of canned…that works as well!
1 large jalapeño, stem and most of seeds removed (Like it super spicy? I would start with one, then taste and add another if needed. It’s got pretty decent heat at this level, and the heat increases as it sits.)
Mel, I followed your recipe almost exactly for what it called for except I laid back on the jalapenos, since we don’t like our salsas too hot. Both my husband and I love this recipe and wouldn’t change a thing. Thank you for sharing it with us.

Hi Pam, honestly, I don’t know how that would work. All the vegetables have different levels of acidity – and that’s what makes a recipe have the correct pH balance for food safety. You might be better off googling a homemade salsa recipe without bell pepper.
“There are tons of salsas out there, but I haven’t found one exactly like mine. (I don’t like the taste of lime or lemon juice. It’s similar to pico de gallo I guess.) Do yourself a favor and find authentic Mexican chips from a local restaurant to go with this! Can’t beat the taste. 🙂 Can spice this up if you want, I do this for my bf, just add some cayenne to the mix! I love this so much I can eat half the bowl in one sitting!!”
On taco night, my husband polishes off half of a 16 oz. jar of “HOT” salsa all by himself. My daughter eats it with her spoon if we tell her she’s cut off on tortillas chips. Did I mention she’s only two years old?
Jami I am a new canner and i have been researching the 15 pints of salsa i recently canned. I did not put lemon juice in, I did not measure ingredients and I used fresh cilantro, and parsley, and then I did all this in a water bath. The more research I do, the more I think I might have to dump all this out and try again.
