So what is this cold soup that I keep talking about? Like I already mentioned, I prefer my salsa chunkier. I did attempt to eat the processed salsa as a dip a few times, but it just didn’t work for me. It reminded me too much of a soup. Since I was left with a large jar of liquidy (again not sure if this word exists) salsa each time, I didn’t want to waste it. So I ate it as a soup. And boy did I grow to love it.
I have to admit I’m sort of a snob when it comes right down to it. I only like fresh salsa. Some of you may not notice or even care even that there is difference, but to me there’s as obvious difference. To me, the jarred kind tastes like an overly chunk-defied pasta sauce *ack*. The only way I can control how thin or thick I want it… is by making it myself and I prefer it fresh with small chunkage. Honestly salsa isn’t hard to throw together and it makes a lot so it really is cost effective! You just need a food processor.
But remember how I said that this salsa recipe is really versatile? Well that’s because you don’t have to eat it only as a snack, you can easily incorporate it into your other meals. Here are a few suggestions:

Made your recipe last week exactly as written, except for the jalapenos. Used 12 jalapenos and left seeds in. Turned out perfect. The sugar and the spices gave it a great sweet heat. Just wondering how many jars the expected yield is from this recipe, I can’t seem to find it anywhere (it’s probably somewhere, I just can’t find it..), and the pictures show 8, sometimes 5. Im thinking about doubling, just trying to figure out how many jars I’ll probably need.

I never make comments on websites but I have to say that this recipe is really really good! I had to stray a bit because we did not have enough tomatoes from the garden, so I added about 30-40% roasted Tomatillos. Next time I will go and buy enough tomatoes so I can triple the recipe. Looks like an awesome recipe; we’re trying it tonight. All of our garden tomatoes and peppers are ready for the task. I noticed that some folks were wondering about the tomatoe pounds to cooked cups conversion. I found out that 2 1/2 pounds (1.1 kg) tomatoes = 3 cups chopped and drained fresh tomatoes = 2 1/2 cups chopped and cooked tomatoes = 2 1/2 cups canned tomatoes in puree or juice. You can also substitute apple cider vinegar (ACV) for white vinegar. We mixed up the peppers too, since we like it spicy. Looking forward to a positive result. Does it not look like the texture of the salsa in the pic? Also, did you use the grape tomatoes like I have listed? Different tomatoes have different water levels, so that could be it if you used a different tomato than I used.
Delicious!!! As far a second knowing how many tomatoes to use, you mentioned somewhere that it was three sheet pans of halved tomatoes. Using this information, I collected my garden tomatoes on my counter by placing them on my baking sheet. When I had my baking sheet full plus another half, I knew I had enough tomatoes (or at least that I would be close once I drained them). Turned out great!! Even my daughter who can tell handle spicy foods LOVES this salsa!
Wipe rims of jars then put lids on. Screw the canning rings on using your fingertips (not your entire hand) until it’s tight. (This will get it to the correct tight fit; using your entire hand will make it too tight.)
Wearing gloves, peel poblano peppers, the blackened skins should come right off. Pull out stem and discard. Cut poblanos open and remove seeds. Finely chop peeled and seeded poblanos. You should have 1 cup, and no more than 1½ cups, again, for canning purposes.
Bring a large pot of water to a rapid boil. Carefully drop the tomatoes in the boiling water for 30 seconds them remove. Peel the skins and squeeze the seeds to remove them along with excess water. Place the tomatoes in a colander to drain. Chop the tomatoes.

GREAT salsa recipe. My first time making salsa from my own tomatos and peppers, read many different recipes online and in books, decided to try yours first. So good!! This salsa is also amazing before it’s cooked. I filled a container and put it in the fridge and then cooked, canned four pints. Just personal taste, I cut way back on jalapeños, used about two, and really let’s the taste of the tomatoas and green peppers shine. Thanks very much for sharing this!
No need to add water. It’s the juice from the tomatoes and the lemon or lime juice. Personally, I used lime. I did not use paste either. But this recipe was spot on. Absolutely delicious! I used fresh Cayenne peppers out of the garden instead of jalapeño as well.
1 Sterilize jars and lids in water bath: Place steamer rack in the bottom of a large (16-qt) stock pot or canning pot. Place new or clean mason jars on the rack. Fill the jars with water and fill the pot with just enough water to come to the top of the jars. Heat water to a simmer. Simmer for 10 minutes. (Keep the jars warm while preparing the salsa.)

I read once you can freeze whole tomatoes and use them later.. me being lazy last year decided to do that with my abundance of garden tomatoes. Have you ever tried that? I’m wondering if I can pull them out and make this..?
I’ve never attempted to use canned tomatoes in the recipe, and can’t remember the last time I purchased store tomatoes, so I’m not sure how much liquid is in there in proportion to the fruit. My best guess to make this work would be to drain the tomatoes and then weigh them – but this would be a little high since the starting weight with raw tomatoes includes skins, seeds and excess juice that’s removed/drained off. Maybe around 16-80 pounds drained tomatoes? When I’ve drained my tomatoes after chopping, I end up with around 7 quarts in volume. There is no simple answer, unfortunately. If you give it a go, you may way to get pH strips to test the finished salsa and make sure the pH is below 4.6 for safe canning. If not, you could freeze, or add more vinegar.
Used this for my first time canning salsa. So far so good. I did change the spices just a bit because I do not like cumin and I left out the celery (didn’t see that on the ingredient list when I made my shopping list) but added more onion to make up the difference. added 1/4 cup dried red pepper flakes because we like things SPICY!!!! I didn’t have enough for the last pint so I put it in a bowl in the fridge to cool and once it cooled Oh my! The best salsa ever!!!!! I used lime juice instead of vinegar because that is what my mom always did. the spicy with the lime juice and cilantro is just such a good combo! I also generously doubled the cilantro as we can’t get enough of it. How long do you let your jars sit before you open them to eat the salsa?
