Looks and sounds delicious. Hopefully, I am going to make it this weekend. I enjoy salsa very much. Been looking for a great recipe for quite a while. The comments were all praising the recipe for its looks, texture, and taste, so how could I go wrong, right! Did I overlook the yield of this recipe? If not, how cod salsa recipe pints does this make?

Even so, a pressure canner affords greater safety that a boiling water bath, and is more versatile. But if you follow my recipe and use vinegar or lemon juice as stated in the recipe, the boiling water bath will work fine.

If you’re looking for a fresh and flavorful salsa, this recipe is an excellent choice. The combination of diced tomatoes, peppers, and garlic make for a classic fresh salsa. Serve it with tacos, burritos, or as a party dip with tortilla roll-ups or tortilla chips. It is a very good condiment to serve alongside grilled or baked fish fillets, grilled chicken, steaks, and pork chops.

Have sterilized pint jars and lids and screw caps ready (they should all be washed in very hot water). Use a canning funnel and ladle hot salsa into jars, leaving a ½-inch head space. Wipe rims clean with a damp cloth and carefully place lid on and screw cap in place.  Process in a boiling water bath for 15 minutes, then place upright on counter for 24 hours (see recipe notes for link to USDA Canning Guidelines). You will hear popping sounds as the jars seal. If after 24 hours, any haven’t sealed, put in refrigerator to use now.

Hi excited to try this recipe ! Do I have to boil the tomatoes for 20 minutes or can I get by with just heating til it’s hot. I often find canned salsas are a little over cooked by the time they go through the cooking and the canning processing time. Thank, Melissa
