I am going to try this recipe. I have one but my husband finds it too runny. I don’t like canning so I freeze it. Do you think yours would be fine to freeze as well? I can’t see why not it will probably have extra liquid when unthawing which I can just drain. I just wanted your thoughts.

I made 15 quarts of this salsa last weekend. Just opened it today and it is AMAZINGLY good. I followed the recipe exactly and and I agree, it is somewhere between mild and medium. It is not hot. Perfect consistency and flavor. Now that I know how perfect it is, I have to make more while I still have tomatoes from the garden!

Then added green and red bell peppers and cucumber. All veggies super finely chopped and tossed in fresh lime juice. The longer the salsa sits the stronger the flavor intensifies. So you can make this the night before and keep chilled until serving.

Combine whole tomatoes, Rotel, onion, jalapeno, garlic, sugar, salt, cumin, lime juice, and cilantro in a blender or food processor. Pulse until you get the salsa to the consistency you’d like—I do about 10 to 15 pulses. Test seasonings with a tortilla chip and adjust as needed.

Every year I plant way more tomato seeds than any one family should, in hopes that a few plants will survive and thrive. I am not known for being the best gardener, yet I do get lucky every now and again.

But I agree with you, I can eat brownies for a meal and I’m happy….or lets say I used too…now that I have to watch my chocolate, I couldn’t do it…..I’m looking for some white chocolate brownies…..have a recipe for that ? But I suppose I could just use white chocolate instead of the regular chocolate in the recipe eh ?

Best homemade salsa EVER!! I get compliments from everyone who tries it–including a Hispanic friend from Mexico. I love it and will be growing a huge salsa garden every year for the purpose of making this recipe!

Made this today with my remaining garden tomatoes, roasting the tomatoes, garlic, and onions as directed. Within just a few seconds of pulsing in the food processor, the mixture turned to complete soup. I mean, there was just no salvaging a salsa type of consistency out of it. The spices are nice and I’m going to use it to make a cream of tomato soup tomorrow, but wanted to warn others who may be really needing a salsa end product. And maybe you have some tips for ensuring this doesn’t happen?

Anyways… the use of steam canners was approved for use last year by one of the university extension offices, and is on the NCHFP website – with a disclaimer they have been approved for anything under 45 minutes. They added a statement they will be updating their pages to reflect that.

I made this for the first time the other day (first time making anything really…) and it turned out great! Just wondering if you have any tips for making it any sweeter? Would using brown sugar be a good idea?

Made my second batch today.  First batch was a just over a week ago and yielded 8 jars.  It was quickly apparent this was not enough!! lol   Family is raving about this recipe.  I didn’t add the sugar either time, don’t miss it.    I used the jalepenos with all the seeds and membranes the first time.  Quite spicy but not unbearable.  This time around, I used the seeds and membranes from 3 of 5 of the jalepenos (per batch; I doubled the recipe this time, hoping to keep some in the house for more than a couple of weeks.)  It’s perfect to my taste.. probably a medium to hot level compared to store bought.     My family doesn’t like chunky salsa so I threw the tomatoes in the food processor for a couple of pulses, and used the food processor for the peppers, and onions.  SUCH a great tasting recipe.  All I hear are complaints that we keep running out of nacho chips 😉   Thanks for sharing!!

I really like this. i have made it three times in the past 4 days. last night i got a baking dish threw in half cup brown rice, cup of chicken broth, 1/3 cup corn, then slathered this salsa on top of my frozen chicken and covered it then let it cook for like an hr and a half OMGolly! it was fantastic.

It in never safe to eat salsa that has not been properly canned. Because it is not reheated before consuming it. It is eaten right from the jar.In the directions it says you do not need to hot water bath, or pressure can the salsa, that is false information, you need to can the salsa no matter whether the hot salsa will seal the jars. Canning the salsa insures that the seal will be strong enough and the salsa hot enough to kill the bacteria that can be in the jar. Please only can salsa recipes that that are proven safe, this one does not have enough vinegar or acid to deem it a safe recipe for canning. Would be good to freeze though. If you want to compare your recipe to a safe one look at a current blue ball book. tweaking the recipes are not safe either. I know that you probably had no issues with what you ate,but it’s recipes like this that can cause harm to people who no nothing about canning! Salsa has a lot of non acid ingredients, that potentially cause the food to spoil if not prepared properly. I’m by no means trying to be mean, but trying to keep people safe. Food poisoning sucks, botulism can kill.

Place all ingredients in a food processor or blender, with the tomatoes, chilies, and onion on the bottom (closest to the blade). Pulse a couple of times to chop up the larger chunks, and then puree until salsa reaches desired texture. Taste the salsa and season with additional salt or honey, as desired.

1 tablespoon sugar (optional – you use Stevia (in a prepared form like Truvia, it measures same as sugar; if you use another form, you’ll need do your own conversion) – or Splenda, if you prefer, if you are on a sugar-restricted diet, or simply omit the sugar)

I find I need a little more salt in my salsa…. it just wasn’t quite enough. And I omitted the cumin after the first batch, but I think that’s more personal preference. I have NEVER made a salsa with such great consistency. YUMMERS! Thanks for sharing!
