If you want a salsa that is truly Mexican use fresh tomatillos an peppers. Roast them until the outsideskin is blackened. Add that along with some onion, garlic, salt and very small amount of water to blender. That is Mexican salsa (sin molcajete).
Hi Holly – I’m honestly not sure in regards to food safety. From what I understand, the ingredients that can be altered without affecting food safety are: leaving out the tomato paste (not sure about the tomato sauce), altering the spices like cumin and salt and cilantro, etc., and modifying the amount of jalapenos. I don’t know the pH of radishes and how the would sub in for green peppers – and of course the amount of tomatoes and vinegar (for the main acidity) need to stay the same.
This is my favorite salsa recipe! Thank you for sharing it. I has to substitute half lemon half lime today. That should be ok, right? Also, I doubled the batch and got 13 1/2 pints. Last year I also had extra than what the recipe called for. I weigh and measure everything precisely. I notice that after I strain the tomatoes and boil/simmer them that the consistency is still watery. Should I just squeeze the tomatoes after staining? This still should be ok to eat even though it made more?

Peel and chop the tomatoes and place in a large bowl, being sure to include all the juices. You should have 7 to 8 cups of chopped tomatoes and juices from 5 pounds of tomatoes. You need at least 7 cups for safe canning purposes.

Hi Carl. I wouldn’t worry too much about it. The skins won’t really hurt anything other than the texture. Skimming them off the top sounds like a good idea, but I wouldn’t worry too much if you don’t get them all. Glad you’re trying the recipe.
Remove the jars carefully from the water or steam bath and let cool to room temperature. Check to make sure the jars have sealed correctly (lightly press the top of the lid; it should be firm – if the center bubbles up and down when you press on it, it hasn’t sealed correctly and will need to be refrigerated or re-processed).

Once you’ve squeezed most of the liquid and seeds out, cut up the tomatoes to whatever size chunks or pieces suit your taste (I made a pretty chunky salsa). Empty the water from your saucepot, then throw the chopped tomatoes in there (just don’t turn on the heat yet)

I need to start making my own salsa because we buy the jarred stuff use it for our meal and by the time we use it again it’s no longer good. At least when I make it I can control the quantity and fresh always trumps jarred. Love the brightness!
