Just like I shared this on Instagram, here is the recipe for the lovely lady asking me to share a fresh, healthy salsa. These tomatoes spoke to me when I saw them. I love getting your emails and recipe requests. To come, just to name a few, a vegan “chicken” noodle soup, spaghetti sauce and chocolate fudge cake <<<<< that one is already written! I'm doing my best to get to all of your requests! So if you typically use romas, how many pounds (approximately) do you need to end up with 10 cups of chopped/peeled/drained tomotoes? I have a (fresh) salsa recipe I love, but your post has me intrigued… Into a food processor fitted with the blade attachment; add 1/2 of both a coarsely chopped red and white onion, 1 large coarsely chopped garlic clove and 1 to 2 jalapenos, depending on the level of spice you desire. I’m a 1 medium jalapeno girl, I keep half a jalapeno with seeds and ribs intact and remove them from the other half. To me it’s the perfect amount of heat… to my husband it could be hotter. Meanwhile, in a food processor or blender, combine the chopped onion, cilantro, 2 tablespoons lime juice and ½ teaspoon salt. Once the tomatillos are out of the oven, carefully transfer the hot tomatillos, pepper(s) and all of their juices into the food processor or blender. It depends on the water content of your tomatoes, and how much you drain them. Paste tomato varieties will give a less runny salsa. If you’ve had a lot of rain,odds are your salsa will be more watery, no matter how much you try and drain the tomatoes. The excess liquid will come out during processing. The salsa is extremely hard to resist right out of the blender, but if you can make it a day in advance and store it in the fridge, it’s so much better the second and third day. I’ve never been able to get it to last past the third day. This amazing home-canned salsa really is thick and chunky, just like store bought salsa! it’s packed full of flavor, and doesn’t have a strong vinegar flavor so typical of home-canned salsas. One bite and you’ll never reach for Pace again! I made 15 quarts of this salsa last weekend. Just opened it today and it is AMAZINGLY good. I followed the recipe exactly and and I agree, it is somewhere between mild and medium. It is not hot. Perfect consistency and flavor. Now that I know how perfect it is, I have to make more while I still have tomatoes from the garden! My daughter and I made a few batches of salsa this past autumn. The flavour is good and we have gotten many compliments on it, however I personally prefer a thicker salsa. I am definately going to try your recipe next canning season. I prefer using a pressure canner, so need to know if there is any reason you may not recommend this. LADLE hot salsa into hot jars, leaving 1/2 inch headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot salsa. Wipe rim. Center lid on jar. Apply band until fit is fingertip tight. Cilantro can sometimes turn brown (oxidize) over time and sometimes that happens quicker than other times. Also tomatoes vary in how bright and vibrant they are, some are darker than others and then with the cilantro, that could be making the color darker. I have made salsa using this recipe twice now and its absolutely the best salsa I have ever eaten. I gave a jar to a few friends and they agree. They keep asking me when I’m making more. Luckily I have a large amount of Roma tomatoes from my garden this year. I planted extra so I would have enough to make this salsa. Thank you for this excellent recipe. 1. Chop tomatoes into 1/4-inch pieces; transfer to a medium bowl. Add onion, chile, garlic, cilantro, and lime juice; season generously with salt. Mix to combine. Let stand 15 minutes to develop flavor. Salsa can be kept at room temperature up to 2 hours. Serve with tortilla chips, if desired. Toss the squeezed (Squozen? 🙂 tomatoes into a colander or drainer, while you work on others. This helps more of the water to drain off.  You may want to save the liquid: if you then pass it through a sieve, screen or cheesecloth, you have fresh tomato juice; great to drink cold or use in cooking! By draining the water off now, you'll end up with a thicker spaghetti sauce in less cooking time! And that preserves vitamins (and your sanity). There are still plenty of tomatoes from the farm or maybe you have your own bumper crop going on.  This fire roasted salsa is so good and cans beautifully.  We’ve gone through a couple jars already.  My favorite part of canning is opening a jar in January ~ a welcome taste of summer in the middle of winter. Just wondering how many jars the expected yield is from this recipe,  I can’t seem to find it anywhere (it’s probably somewhere, I just can’t find it..), and the pictures show 8, sometimes 5.  Im thinking about doubling, just https://great-salsa.com/category/canning/ to  figure out how many jars I’ll probably need. If by “cleaning” the peppers you mean not taking all the seeds and membranes out- definitely leave them in if you want a hot sauce. I leave about 1/2 in, but my batches always turn out differently depending on the hotness of the peppers I’m using. The lime adds a better flavor, which is why I prefer it, but both provide the acid needed for canning. Enjoy! Given this is our first year gardening, in pots no less, our plants have not produced standard sized fruits and I’m concerned, they may not continue producing. We’ve been using the tomatoes as they’ve come in, so we’ve not been bombarded by any crops yet, though I know, it’s still early.
