I bought 25 pounds of scratch and dent canning tomatoes at the farmer’s market today and I’m making this salsa now. (The extra tomatoes will become frozen tomato puree.) I’m very excited to see how this salsa turns out!

Hi Laurie, I am going to give your salsa a try – never canned it before. Quick question, have you canned kimchi before? I made it last summer but had to keep in refrigerator because of fermentation. Haven’t been able to find a safe recipe for canning. Thank you!

Hey Andrea – I remember reading somewhere that salsa shouldn’t be canned in quarts because of the density (it doesn’t get hot enough, I believe, when processing) but you could definitely try googling to see if you come up with information that will help you. Good luck!

2. Put butter and 1 cup sugar in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium-high speed until pale and fluffy, about 3 minutes. Reduce speed to medium-low; mix in egg, milk, and vanilla.

Once the salsa is blended, you are going to fry it in 2 tablespoons of hot cooking oil. To fry it you just pour it into the hot oil. This step is important to develop the flavor of the salsa and helps bind it. Don’t skip it.

Q. Do you know how long that will be good for once it is canned? All your other recipes have expiration dates – well, at date ranges. I’m trying to be careful with the labelling so I don’t have problems in March like, ‘Was this bottled last year or three years ago?’ (I’m ashamed to say, it has happened…)

Am going to give this salsa a try as I do sometimes prefer the more saucy/less chunky variety of salsa to eat with tortilla chips. I wonder how people got on with canning it – did anyone ever come back with a report for you on that?

UPDATE 09/06/17: Lots of you have asked for a weight measure on the tomatoes. I’ve been canning this salsa the last few days and experimented weighing and measuring tomatoes. The result? Tomatoes are unpredictable! Meaning, the exact weight  (that will yield the 10 cups drained needed in the recipe) is EXTREMELY variable depending on the type of tomato used.

The measurements are just a guide- add more or less of the specific ingredients as you prefer. So easy too- just throw everything into a food processor and let it do its thing. I’ve had this Cuisinart food processor (<–affiliate link) for years and even after many batches of nut butter grinding, it’s still going strong. This recipe makes a huge batch- plenty to fill tacos, top omelets, mix into salads and for chip dipping. I know this is a good recipe because it is basically the same as my own recipe. I would recommend roasting the peppers for extra flavor and even experimenting with different peppers, like chipotle peppers (yum--very tasty!) Also I prefer using Texas sweet onions (the large sweet yellow onions) rather than purple onions. The lime juice and cilantro really give it a fresh taste. Sea salt is also a very good ingredient. This recipe looks delicious and I cant wait to try it out with my new blender! I absolutely love my Blender! I have had it about a year and have never had any issues. I have been making all different kinds of meals. I still make a lot of smoothies with it but I have been making my own soups and even peanut butter! I have been canning salsa for years with an old-school hand me down recipe (which we love) but my recipe instructs to put 1 tbsp. lime juice per jar (quart)… not added to salsa mixture. I have tomatoes ‘draining’ tonight and am going to try the apple cider vinegar this time around. I have not read this recipe before and an tomato pepper salsa recipe the taste comparison… I have read that it is safe for water bathing, I’m thinking the time would remain the same.

Serve immediately if you’re absolutely needing some fresh pico right then and now (I can’t blame you), but I would recommend, if you can, making this ahead of time so the pico de gallo has a chance to chill and really build its flavor.

Using canned whole tomatoes eliminates the entire cooking process you would need to do in order to remove majority of the water content.
