yes you can tell if you have hot jalapenos if they are dark green they are hot so get the lighter green ones i know only because i made some salsa and didnt know why it was so hot .now i just buy the lighter ones hope that helps.

i currently just moved to belgium and i was wondering what you can substitute for some of the ingredients? i know it makes my spices limited, but if you (or anyone reading could help, i would be most grateful) most specifically: 1- 10 oz can original Rotel.

I know girl, me too! I looovvvee salsa and grew up here in Texas eating it in Mexican restaurants…it is very different than pico de gallo and I always ask to “hold the pico”…but bring on the salsa! Oh and I know, traditionally, salsa uses canned tomatoes or Roma tomatoes, but I just couldn’t resist using these…it was just so simple and delish!

This quick-and-easy salsa tastes great as an accompaniment to meat dishes as well as with chips. I teach kindergarten and my husband is a county Extension agent. We’ve lived down here in the Imperial Valley for 30 years. I say “down here” because Holtville is 15 feet below sea level!

I made the salsa this last weekend with tomatoes from the garden about half slicers and half roma. I followed your easy method which works great for a working mom. But for some reason it turned out not very tomatoey, good spice, thickness, beautiful. I went ahead and canned it because I thought it might get better with time, and was scared to add tomato paste putting everything off balance. Were my tomatoes not ripe enough?

Delicious!!!  As far a second knowing how many tomatoes to use, you mentioned somewhere that it was three sheet pans of halved tomatoes.  Using this information, I collected my garden tomatoes on my counter by placing them on my baking sheet.  When I had my baking sheet full plus another half, I knew I had enough tomatoes (or at least that I would be close once I drained them).  Turned out great!!  Even my daughter who can tell handle spicy foods LOVES this salsa!

If by “cleaning” the peppers you mean not taking all the seeds and membranes out- definitely leave them in if you want a hot sauce. I leave about 1/2 in, but my batches always turn out differently depending on the hotness of the peppers I’m using. I’ve not figured out a way to overcome that. 🙂

Greg actually got the Vidalia Chop Wizard for Christmas one year during one of those gift exchange games where you steal other people’s gifts and stick them with something they don’t want. Luckily for him, this gift came in quite handy. It has been his go to tool for salsa ever since!
