Something that might help cut the process of “cooking down the tomatoes” time. One day while searching for something to store chopped tomatoes in till I was ready to make and can my mother in laws bbq sauce “en masse” early the next morning, my eyes fell on my sun tea jug. I dumped the tomatoes inside and promptly filled both sun tea jugs that I had and set both in the fridge overnight. The next morning I had floating pulp and inspiration hit …. since the water boils off anyhow, why not cut out the proverbial “middle man” and drain off that water before (!) I started the cooking process??!!! You talk about making a huge difference in the amount of time! Wow! The flavor did not change and it still had some cooking time to it to cook off the liquid from the onions and peppers I’d added to it. And then I hit upon an idea to keep me from being tied to the stove to stir, stir, stir … my crockpot with the lid cocked to the side did an excellent job and I only had to stir occasionally, I canned 10 pints of thick bbq sauce last year and so far this year, 24 quarts of tomatoes. I have more than enough tomatoes to make a couple batches of your salsa. I will be using the same “liquid removal trick” and “crockpot cooking trick”. Give the trick a try, anything that frees you up to make more yummy salsa is a good thing!
This recipe uses specific amounts of ingredients, balancing the non-acidic ingredients with the amount of added acid needed to make the recipe safe. Do not increase the amount of green chiles beyond 1 1/2 cups, or decrease the amount of tomatoes less than 7 cups.
This is my favorite salsa recipe! Thank you for sharing it. I has to substitute half lemon half lime today. That should be ok, right? Also, I doubled the batch and got 13 1/2 pints. Last year I also had extra than what the recipe called for. I weigh and measure everything precisely. I notice that after I strain the tomatoes and boil/simmer them that the consistency is still watery. Should I just squeeze the tomatoes after staining? This still should be ok to eat even though it made more?
I have canned a lot of salsa throughout the years with great success. This year I was looking for a recipe that was thick and a little crunchy and fresh tasting. The recipe is excellent and there’s no need to change a thing unless you want a hotter salsa. I can’t recommend the recipe enough!!! Thank you!!!
After 12 to 24-hours, check to be sure jar lids have sealed by pushing on the center of the lid. The lid should not pop up. If the lid flexes up and down, it did not seal. Refrigerate jar and use up within a week. Once the jar is open, refrigerate and use up within a week. Yields 6 half pints, 3 pints.

Looks like an awesome recipe; we’re trying it tonight. All of our garden tomatoes and peppers are ready for the task. I noticed that some folks were wondering about the tomatoe pounds to cooked cups conversion. I found out that 2 1/2 pounds (1.1 kg) tomatoes = 3 cups chopped and drained fresh tomatoes = 2 1/2 cups chopped and cooked tomatoes = 2 1/2 cups canned tomatoes in puree or juice. You can also substitute apple cider vinegar (ACV) for white vinegar. We mixed up the peppers too, since we like it spicy. Looking forward to a positive result. This was too spicy for me (not mild!) and very vinegar-y! I know the acidity is important, but tomatoes seem pretty acidic on their own, right? I’ll stick to my old recipe (which is time tested from my mother in law, but I’m not sure if it’s officially approved by a lab) but I do like your skin slip method. Took longer than 3 min for mine. And the less ripe store-bought Romas didn’t really slip off. Garden ones did, but they weren’t Romas.
I use 1 can Roasted Garlic tomatoes, 2-3 Jalapenos (from Church’s chicken), finely chopped onion, Minced Garlic (in the glass), Cilantro, salt and pepper, and Lemon juice….I use my lil hand held blender to smash the bigger pieces……..My husband HAS to eat this with Every meal or he would be upset lol…Try it!
How long do you find this will last in the fridge? I’m doing a Fix 21 program and would like to make a batch to add to my meals when I need some variety aside from broccoli (which I do enjoy, just not every night :))

The salsa is extremely hard to resist right out of the blender, but if you can make it a day in advance and store beer salsa recipe in the fridge, it’s so much better the second and third day. I’ve never been able to get it to last past the third day.
I did adapt the recipe it by increasing the peppers by 1/2 cup, and then decreasing the onion by a 1/2 cup to keep the recipe in balance. This makes the salsa a bit more spicy, which we like. I also added a few more dry seasonings which is okay to change in canning recipes since it doesn’t affect acidity.
I didn’t wear gloves when I was handling the poblanos and jalapeños. Big mistake. My hands were burning, even under my nails, so wear gloves! I didn’t think they packed that much heat, but they do. Better safe than sorry.

Please correct this recipe before someone gets sick. The vinegar recipe part is way to low. It should be 1 cup not 1/2 cup. 4.0 is way too low it should be 4.6. I would do it before you end up getting in to trouble… serous
I used the pressure canner and after the timer went off and the canner cooled (decompressed too) I pulled out the jars and noticed the head space was way bigger . I let them cool over night and now I see like moisture on the inside of the jars where the extra head space is. Is the salsa still safe to eat?

So, for some reason, I didn’t think it was recommended to can salsa in a pressure canner (or perhaps it’s just that it’s not well publicized on the timing). How long do you process your pints of salsa in a pressure canner?
6When cool, check seals. Lids should be down in the center or stay down when pressed. Remove rims, label, date and store in a cool, dark, dry place. Unsealed jars should be refrigerated and used within 3 weeks.
When processing time is complete, turn off heat and allow the canner to cool down and settle for about 10 minutes. Spread a kitchen towel on the counter; remove the cover by tilting lid away from you so that steam does not burn your face. Use a jar lifter to lift the jars from canner and place on the towel. Add the seasonings and bring to a gentle simmer, just to get it hot (180 F, if you have a thermometer). Keeping it at 180 F for 30 minutes prior to water bath processing kills any bacteria and enzymes. Adjust the heat to maintain 180 F and simmer for 30 minutes, stirring occasionally.
It is my belief that you need both fresh and canned ingredients to make the best homemade salsa recipe. I like to start with fresh sweet garden tomatoes, red onion, garlic, jalapeños, cilantro, and lime. Then chop them into a fine grade in the food processor.
I need to start making my own salsa because we buy the jarred stuff use it for our meal and by the time we use it again it’s no longer good. At least when I make it I can control the quantity and fresh always trumps jarred. Love the brightness!

Haha, always worth the question! I just don’t know about pH levels and food safety of using canned so you might try googling to see if any of the main canning experts (Ball, NCFHP, etc) have anything to say about it.

Add all of the ingredients to a food processor and blend until desired consistency. I like mine more saucy, than chunky. Serve either at room temperature or slightly heat up. It is delicious warm! Serve with chips, tacos, omelettes or burritos!
1 Sterilize jars and lids in water bath: Place steamer rack in the bottom of a large (16-qt) stock pot or canning pot. Place new or clean mason jars on the rack. Fill the jars with water and fill the pot with just enough water to come to the top of the jars. Heat water to a simmer. Simmer for 10 minutes. (Keep the jars warm while preparing the salsa.)
