Cover the jars with at least 1-inch of water. Bring to a rolling boil and process for 15 minutes (20 minutes for altitudes 1000 to 6000 ft, 25 minutes above 6000 ft). Then turn off heat and let the jars sit in the hot water for 5 minutes.

Follow standard canning instructions to sterilize the jars and lids. Ladle the hot salsa into the hot jars, leaving about 1/4 inch head space. Close the lids and place the jars in a boiling water bath for 15 minutes. Remove the jars and let them rest, undisturbed, for 24 hours before moving them.

For those wonder why to use cumin seeds instead of the already ground cumin it really does make a difference. Toast in a dry pan & when you can smell it it’s ready to be ground up. aroma is awesome. And for those of you wondering, can you use canned tomatoes? Yes. I have used fire-roasted canned, too, to supplement the tomatoes I had on hand. I just add the canned at the end of cooking down my fresh tomatoes. I even made a batch with all my left over tomatoes from saucers, beefsteaks, cherries…I throw into a food processor with skins on. We like it with all the bits of skins, too. Cuts down the time by a lot for making big batches like me!

Selecting the right jalapenos can make a huge impact on your salsa. Jalapenos have between 2,500 – 10,000 Scoville heat units. That is a pretty broad range, which means some jalapenos are very tolerable, while others are scorching hot. That can make it challenging when trying to figure out how many jalapenos to add to your salsa, or other dishes.
Hey Ann – I would recommend making the salsa and refrigerating (as a large batch), reheating on the day you want to process, and then putting the hot salsa into warmed jars before processing. Proper food safety for steam canning means the jars need to stay as warm as possible before filling, during filling, and right as they go onto the steam canner.

Also, while we are on the topic of modifications, if you want to make this on a whim and you don’t have lime juice, white vinegar works just fine. I also make this without cilantro when my dad will be eating it because he hates cilantro. And it’s still good!

In a food processor or blender, I combine a can of diced tomatoes, a can of Rotel which is seasoned diced tomatoes with green chilies, 1/2 of a small onion, 1/2 of a jalapeno, lime juice, garlic, cilantro, honey and a few spices. Pulse for 30 seconds and that’s it. I’ve been known to throw in half a cucumber and a carrot before too. This is the kind of salsa that you can’t really screw up. You can follow the recipe below as a guideline and do as you like to make it your own.

Anyways… the use of steam canners was approved for use last year by one of the university extension offices, and is on the NCHFP qdoba green salsa recipe – with a disclaimer they have been approved for anything under 45 minutes. They added a statement they will be updating their pages to reflect that.
Now to the topic at hand – I’ve had the same concerns as you, especially since my dear husband is Mexican! We loved the canned salsa I made for the first week or two, then it was too vinegary, so now I use it for stuff like zucchini squash to use it up. Haven’t tried it again because, well we don’t have enough tomatoes yet and am leery about the vinegar and how to make it spicy enough. I never thought to skimp on the onions to compensate!!!
On adjusting the heat: You can use seeds in part or all of your jalapenos. Seeds add heat; I leave them in about half the peppers. That’s for “hot” salsa! Also, you can seek out hot peppers with more stripes or “cracks” if you like spicy, as they naturally carry a zing.
Chop up your onions, jalapeños, and any other peppers you’re using to whatever size you want (if you don’t like big chunks, you can use a food processor) and add them to the saucepot with the tomatoes.
