Making and canning homemade salsa is a great way to use up an abundance of fresh summer tomatoes, but only some recipes are appropriate for canning. Always be sure to look for recipes where the salsa is cooked before it’s canned (cooking helps kill germs and prevents spoilage and foodborne illness) and then follow the instructions in the recipe exactly. Sterilizing the canning jars and lids, cooking the salsa for the correct amount of time, and then cooling and storing the jars properly are all important factors in making your recipe delicious and safe to eat.

Anyways… the use of steam canners was approved for use last year by one of the university extension offices, and is on the NCHFP website – with a disclaimer they have been approved for anything under 45 minutes. They added a statement they will be updating their pages to reflect that.

Chill a small saucers in the freezer. Place a teaspoonful of soft spread on the chilled saucer and place in the freezer for 1 minute. Remove the saucer from the freezer and push the edge of the spread with your finger. A mixture that has reached the gel stage will be set, and the surface will wrinkle when the edge is pushed.

This recipe is FANTASTIC!!! I have tried others and have not been satisfied with the consistency. This recipe really does end up thick and chunky and delicious. I added some mini-bell peppers (red, yellow, and orange) and only used half the cilantro, (I made a double batch). Almost everything else I left the same and the consistency, flavor and spice was fantastic. I will use this recipe again and again. Thank you so much for posting!

I just made this and it is wonderful. I left the ribs and seeds of half of the jalapeno because I like a little more heat to my salsa but couldn’t have it too hot for my husband (that’s why only half of the jalapeno and not the whole thing – lol). I will never buy jar salsa again as I always seem to have these ingredients on hand and it’s so easy to make. Thanks for the recipe!

Thanks for this great recipe! Every jar is gone! I was worried about how long it would be good for. It didn’t last even 1 month! I think I have found the perfect Christmas gift for all my people! Thankfully the climate I live in supports fresh produce all year round!

If hand-chopping tomatoes, you can drain any water that accumulates while cutting them, which helps make a thicker salsa. However, this doesn’t work with the quicker processing method, so the resulting salsa is a bit thinner, but the savings in time totally makes up for it, in my opinion.

Yes, this is the best I have made via canning! My husband and kids ate it up very quickly and now I have a recipe to use for all my tomatoes! This is the best salsa I have ever tasted and the first one I have made. Made a ton of batches last year and still enjoying it. Only change I made was red onions instead of white based on personal preference. I have people begging for another jar! I obliged of course.

I don’t like messing with a water bath and bowl of ice water to peel the tomatoes; instead, I cut them in half and place them cut side down on a large baking sheet (really cram them in there in a single layer). I broil them for 3-4 minutes until the skins begin to pucker. Once they come out of the oven, the skins will wrinkle and peel right off and the baking sheet is easily cleaned. For this recipe, I use about three sheet pans of tomatoes (again the exact amount will depend on variety).

It in never safe to eat salsa that has not been properly canned. Because it is not reheated before consuming it. It is eaten right from the jar.In the directions it says you do not need to hot water bath, or pressure can the salsa, that is false information, you need to can the salsa no matter whether the hot salsa will seal the jars. Canning the salsa insures that the seal will be strong enough and the salsa hot enough to kill the bacteria that can be in the jar. Please only can salsa recipes that that are proven safe, this one does not have enough vinegar or acid to deem it a safe recipe for canning. Would be good to freeze though. If you want to compare your recipe to a safe one look at a current blue ball book. tweaking the recipes are not safe either. I know that you probably had no issues with what you ate,but it’s recipes like this that can cause harm to people who no nothing about canning! Salsa has a lot of non acid ingredients, that potentially cause the food to spoil if not prepared properly. I’m by no means trying to be mean, but trying to keep people safe. Food poisoning sucks, botulism can kill.

I meant to measure too (even bought a scale) but forgot! 🙂 I think my recent batch that I produced 7 cups worth was about 12 lbs of tomatoes. If you do measure or count the tomatoes please let us know. Excited to plan ahead next year to make even more salsa!

I’m not 100% positive, but I think so. Basically the recipe needs enough acidity to can properly and be food safe. You might google and see if you can sub lime juice in canning recipes for the lemon juice.

On adjusting recipes: I know you want to “make this your own,” but with canning recipes you can only do so much. It’s important for food safety to have the proper ratio of acidic to non-acidic foods. The tomatoes are acidic, but the peppers, onions, and garlic are not. That’s why you must add the vinegar, and you can’t really mess with the amounts of peppers.You could, however, fiddle with green peppers and colored bells, or sub some of the jalapenos out for a milder pepper if you don’t like it so spicy. Just don’t be too generous with your helpings and overdo the amounts. That’s one thing I love about this recipe – it gives quantities in cups, rather than forcing me to scratch my head and wonder which onion is “small” and which green pepper fits the “medium” category.See this article on Modifying Canning Recipes and Food Safety for more details.

I had save this recipe cause I knew it would be good, and it proved to be the best one I’ve ever made. My ratios of spices and peppers were a little altered, and I had a can of Muir Glen fire roasted, crushed tomatoes which added a little more depth perhaps, but it’s a big winner. This looks fantastic. I will definitely try the blender method to save preparation time. However, I would recommend using fresh ingredients rather than canned for a healthier and fresher flavor…always!

UPDATE: Since many of you have asked about a weight measure for the 10 cups of tomatoes, as I’ve been canning the salsa the last few days, I’ve done a little experimenting/research. Basically, I’ve https://great-salsa.com/about-us/ it varies GREATLY depending on variety. When I used SIX pounds of garden tomatoes + Roma (the paste tomatoes probably only made up about 1/3 of the total), after taking the skins off, lightly crushing, and draining, the yield of tomatoes to use in this recipe was about 2 1/2 cups. When I used TWO pounds of only Roma/paste tomatoes, after taking the skins off, lightly crushing, and draining, the yield of tomatoes to use was a little over one cup. I tend to err on the side of over draining the tomatoes, if anything, so that makes a difference as well. For me, because I usually use paste tomatoes in this recipe, I would plan on around 18-20 pounds (give or take) of Roma/paste tomatoes to get the 10 cups for this recipe…and even more if using tomatoes with a higher water/lower flesh content.

Cover the jars with at least 1-inch of water. Bring to a rolling boil and process for 15 minutes (20 minutes for altitudes 1000 to 6000 ft, 25 minutes above 6000 ft). Then turn off heat and let the jars sit in the hot water for 5 minutes.

Hi Theresa. Yes, you can double or triple the recipe for a larger batch. This recipe takes more time than others, but is so worth the effort. You picked a good one to start canning with. I hope you enjoy the results!

For over a year now, I have been making my variation of Yesenia’s recipe. And now my dear readers, I am sharing with you. Oh and Yesenia did give me permission. She is not one of those that likes to keep good food a secret!

Katie, a 35 minute processing time is TOO long for salsa- the reason your canned tomatoes need that long is because you don’t add a cup of vinegar. Do a quick Google search to find that all the reputable salsa recipes call for 15 minute processing time (extension services, and the Ball Blue Book are two)- even for the recipes that have tomato paste added. I know you said it will make you feel better to go longer, but there are good reasons not to: energy costs and over-cooking the salsa are two good ones.

Hi, Sommer, I was pointed to your blog by Cory Kowalski. I immediately saved your detox soup recipe AND the salsa one. I love salsa and love making it, but I can’t eat as much as I’d like to because I have kidney disease (and tomatoes aren’t good for me). I am going to try making a salsa with an extra dose of tomatilos, substituting them for some of the tomatoes. I’ll let you know how it comes out. BTW, I can’t find a ‘follow’ button on your site — except pointing to Pinterest, which I know nothing about.

The easiest way to get it started it too pulse the blender 5 or 6 times until the blades start to catch. Then blend for about 30 to 45 seconds until it is fully blended but still has a coarse texture. The salsa sticks to tortilla chips better when it has a little texture.

I’m always searching for restaurant style salsa at grocery stores, and after making it last night, this is exactly what I’ve been looking for! I live in Houston where we have some of the great Mexican restaurants, and this salsa was absolutely comparable. Thanks!

1 large jalapeño, stem and most of seeds removed (Like it super spicy? I would start with one, then taste and add another if needed. It’s got pretty decent heat at this level, and the heat increases as it sits.)

Ok. I made the salsa yesterday and threw a jar into the fridge due to an improper seal. I spooned some of the salsa onto my avocado and eggs tonight, and it was divine. I had told myself just one day spent on making salsa, but I may make it two:)
