I was SO excited when I found your recipe on Pinterest that I went to the store immediately and bought all the ingredients…all except the onion and the cumin. Do you think frozen chopped onions would work? And is there anything I can substitute for the cumin or can I leave it out?? I think I might have to go back to the grocery…lol. I cannot wait to try this salsa!!!
Remove lids, one at a time, from the simmering water, quickly dry off, and place on top of filled jar. Then, screw on the band (hold the lid in place with one finger in the center, and use the other hand to screw on the band).

Cook the salsa until it’s nice and hot (boiling), and then follow the instructions I posted yesterday for canning tomatoes to fill and process the jars. If it seems too juicy, you can always boil off some of the water first.
I prefer to refrigerate salsa for 1 day prior to serving to allow the flavors to marry and meld. Salsa will keep for about 1 week in an airtight container or jar in the fridge; however, it’s never lasted that long in this household.

You should be able to substitute canned diced tomatoes, but I would increase the weight because they are packed in liquid that should be strained off. Either water bath canning or pressure canning should work just fine.
