I encourage you to try it if you would like a healthier option for seasoning your food that hasn’t been through some terrible processing and adding of chemicals or additives. They also sell unrefined Chancaca sugar that has been produced from molasses, instead of going through an extensive process like most sugars on the market. I’m dying to try that next! Making and canning homemade salsa is a great way to use up an abundance of fresh summer tomatoes, but only some recipes are appropriate for canning. Always be sure to look for recipes where the salsa is cooked before it’s canned (cooking helps kill germs and prevents spoilage and foodborne illness) and then follow the instructions in the recipe exactly. Sterilizing the canning jars and lids, cooking the salsa for the correct amount of time, and then cooling and storing the jars properly are all important factors in making your recipe delicious and safe to eat.

Anyways… the use of steam canners was approved for use last year by one of the university extension offices, and is on the NCHFP website – with a disclaimer they have been approved for anything under 45 minutes. They added a statement they will be updating their pages to reflect that.
Ultra Gel is ultrafine cornstarch, which is used to thicken the salsa. It is now the preferred product for thickening when canning. I recently purchased Ultra Gel, which is GMO free. Clear Jel is a similar product. When I first made this recipe, it called for cornstarch, but Ultra Gel and Clear Jel are now recommended over corn starch for canning.

Sometime late September I made a batch of salsa using this recipe. It WAS the best salsa I’ve ever had. Like you said just the right balance of flavors and not too spicy. I have a jar to a friend and her guests loved it too. I don’t have much left so will make sure I make more next. The tomatoes I used were from my garden – two varieties plus some Roma tomatoes. It’s the mix of tomatoes that helps make this recipe so good. Thanks to you for making it available.
Even so, a pressure canner affords greater safety that a boiling water bath, and is more versatile. But if you follow my recipe and use vinegar or lemon juice as stated in the recipe, the boiling water bath will work fine.
Since many of you have asked about a weight measure for the 10 cups of tomatoes, as I’ve been canning the salsa the last few days, I’ve done a little experimenting/research. Basically, I’ve found it varies GREATLY depending on variety. When I used SIX pounds of Roma + every day garden tomatoes, after taking the skins off, lightly crushing, and draining, the yield of tomatoes to use in this recipe was about 2 1/2 cups. When I used TWO pounds of only Roma/paste tomatoes, after taking the skins off, lightly crushing, and draining, the yield of tomatoes to use was a little over one cup. I tend to err on the side of over draining the tomatoes, if anything, so that makes a difference as well. For me, because I usually use paste tomatoes in this recipe, I would plan on around 18-20 pounds (give or take) of Roma/paste tomatoes to get the 10 cups for this recipe…and even more if using tomatoes with a higher water/lower flesh content.
The measurements are just a guide- add more or less of the specific ingredients as you prefer. So easy too- just throw everything into a food processor and let it do its thing. I’ve had this Cuisinart food processor (<–affiliate link) for years and even after many batches of nut butter grinding, it’s still going strong. This recipe makes a huge batch- plenty to fill tacos, top omelets, mix into salads and for chip dipping. This made some damned good salsa! We had a salsa competition at my work and I needed a recipe that would make a lot of salsa. I had only made salsa once before and it didn’t turn out as good as this recipe. I omitted the yellow bell peppers simply because I didn’t care for them. I also added a small amount of sugar to give the salsa a bit of sweetness. This salsa won the competition! I know that you probably had no issues with what you ate,but it’s recipes like this that can cause harm to people who no nothing about canning! I noticed that some folks were wondering about the tomatoe pounds to cooked cups conversion. I found out that 2 1/2 pounds (1.1 kg) tomatoes = 3 cups chopped and drained fresh tomatoes = 2 1/2 cups chopped and cooked tomatoes = 2 1/2 cups canned tomatoes in puree or juice. You can also substitute apple cider vinegar (ACV) for white vinegar. We mixed up the peppers too, since we like it spicy. Looking forward to a positive result. Organic spices are great if you can get them. To me, the flavors and aromas seem more intense than their conventional counterparts. Put all of this into a stock pot. I used a dutch oven for this batch and it was just the right size. Next you need to add your minced garlic, vinegar, salt and cilantro. Stir it up well and place on the stovetop on high until it starts to boil. I bought 25 pounds of scratch and dent canning tomatoes at the farmer’s market today and I’m making this salsa now. I had fresh curry leaves in the fridge. LOL, I am of Indian origin! I threw some curry leaves in the recipe. I also added a dash of ginger. I didn’t know lime also went in. Fortunately I had one. Katie, a 35 minute processing time is TOO long for salsa- the reason your canned tomatoes need that long is because you don’t add a cup of vinegar. Do a quick Google search to find that all the reputable salsa recipes call for 15 minute processing time (extension services, and the Ball Blue Book are two)- even for the recipes that have tomato paste added. I know you said it will make you feel better to go longer, but there are good reasons not to: energy costs and over-cooking the salsa are two good ones.
The tomatoes you use should be able to stand up to the canning process. Good varieties to use (such as Roma or Beefsteak) have thick walls and less water than other varieties. Instead of buying them at the supermarket, I suggest buying them from a local farmer’s market. I picked mine up from an Amish community market – an enormous box full (that I could barely lift) for around ten or twelve dollars. (That being said, I had way more than the 15 lbs this recipe calls for, so I made more than one batch) If possible, buy all of your salsa veggies this way.
This recipe uses specific amounts of ingredients, balancing the non-acidic ingredients with the amount of added acid needed to make the recipe safe. Do not increase the amount of green chiles beyond 1 1/2 cups, or decrease the amount of tomatoes less than 7 cups.
Mexican food is my favorite, so I make it alllll the time. Most of the time, whatever I’ve made, I feel like it just HAS to be topped with my beloved sour cream (pretty sure that’s not authentic, buuuuut I love it) and of course, some sort of salsa or pico de gallo.
Mel, I followed your recipe almost exactly for what it called for except I laid back on the jalapenos, since we don’t like our salsas too hot. Both my husband and I love this recipe and wouldn’t change a thing. Thank you for sharing it with us.
