I don’t know about you, but I looove the sides of fresh salsa and pico de gallo served at authentic Mexican restaurants. All those fresh and crisp veggies – it’s a snack that’s not only tasty, but super healthy!
Found your version slightly modified (see below) on-line for my kids high school class project. Made it and everyone fell in love with it!!! We like our salsa a bit more spicy so would suggest a simple but flavorful modification:
I would like to make this, although we just finished off a jar of LF (roasted) salsa and it was REAL good. The only problem would be getting tomatoes in winter, so this homemade salsa would be great. Thanks.
The seeds in the peppers are what add more spice to your salsa. So if you like a spicier salsa, add more seeds from the jalapeno and bell peppers. If you really want it hot, use a red hot jalapeno pepper. If you want a milder salsa, use red bell peppers in place of the green peppers and take out all of the seeds in the jalapeno peppers.
The recipe is easy to adjust to your own taste. Do you like chunky or smooth salsa? If you want it chunky, don’t puree it as much and drain the can of tomato before adding it to the food processor. If you like your salsa a bit more smooth and thin consistency, don’t drain the tomatoes. Also, you can make it spicy or mild according to your own preferences. Remove all the seeds and white membranes from the jalapeno for a mild salsa.
Sure I love Pico de Gallo, trust me when I say I eat it with a fork for lunch some days (just ask the Mexican stand at my farmers market, what I eat for lunch most Thursdays, lol), however this salsa?? This salsa I can drink with a straw. I haven’t…yet, I literally think about doing just that!
Just a comment. Several people have asked in the Q & A forum if the cup of lemon juice is necessary. It definitely is, as tomato varieties now lack the acid that tomatoes used to have, and it’s not considered safe to can them without an acidifying agent such as bottled (not fresh) lemon juice. You could use vinegar or citric acid, but lemon juice tastes better and citric acid is not as easy to find as lemon juice is. This is similar to a recipe I have used, which is really tasty with the lemon juice.
I just made a double batch. I liked the look of the recipe, and just jumped in! We grow heirloom tomatoes, so I used green zebras, sunny orange ane black plums. Since they are much jucier than Romas, I drained off a lot of liquid and boiled it down, then added it at the end. Worked great. Thanks Katie
Oh this looks delicious Mel! Your recipe is so, so similar to mine! We go through it like it’s water. I made sure I canned plenty last summer to get us through the winter. I have tomatoes coming out of my ears again this year. Looks like I need to get busy! I kind of cheat though and don’t put mine in a steam bath. I just let my salsa come to a boil and keep my jars in a warm oven and the lids in simmering water. I pour the boiling salsa into the warm bottles, then put the lid on and screw the ring on and tip the bottles upside down and let them sit overnight. The lids seal every time. Don’t call the canning police on me !
I have a question regarding the Anaheim peppers. I seen on the internet some places rate this as a medium to hot pepper and others call it a mild pepper. I’m not a fan of hot or spicy peppers but I like the flavor of some. Is there a good substitute that is not as hot?
I would like to try your salsa this year. However, I am not a big fan of vinegar in salsa. I successfully substituted lime juice in the recipe I canned last year. Do you think that would work in this one as we’ll? Thanks!
A food processor makes chopping easier and less time consuming. Seed and cut the peppers into chunks, weigh them, then pulse the peppers into smaller pieces in the food processor. Add the chopped peppers to your saucepan. Chop your onions into pieces, weigh them, pulse in the food processor, and add to your saucepan. Skin your tomatoes, cut into smaller pieces, weigh them, pulse in mango habanero salsa recipe canning food processor, and add to your saucepan.
I made this recipe and canned it today. I pretty much followed the recipe except that I put in 1/4 cup chopped cilantro (and left out a little bit of the onion and jalapeno, about 1/4 worth). Instead of cayenne pepper, I put in a finely chopped cayenne pepper since I had so many from my garden. My tomatoes were not Roma and were pretty juicy. Result: Very Hot!!! (so maybe a whole cayenne pepper was too much??), and only made 3 1/2 pints (I realize results can vary, and my tomatoes probably cooked down quite a lot). All in all, very tasty! PS: Thanks for reminding people to wear rubber gloves when handling hot peppers! I will probably try this again with the other variety of tomatoes that I grew this summer, Russian Black (the ones I use today are called Stupice).
Thank you! I’ve been looking for a good recipe for canned salsa. I love to make it fresh, but don’t always have time for that. I don’t love sugar in salsa. After trying a recipe once, I almost always omit the sugar the next time (same goes for any kind of pizza or spaghetti sauce). How crucial is the sugar?
1 Sterilize jars and lids in water bath: Place steamer rack in the bottom of a large (16-qt) stock pot or canning pot. Place new or clean mason jars on the rack. Fill the jars with water and fill the pot with just enough water to come to the top of the jars. Heat water to a simmer. Simmer for 10 minutes. (Keep the jars warm while preparing the salsa.)
Remove the jars carefully from the water or steam bath and let cool to room temperature. Check to make sure the jars have sealed correctly (lightly press the top of the lid; it should be firm – if the center bubbles up and down when you press on it, it hasn’t sealed correctly and will need to be refrigerated or re-processed).
I just made this using jalapeños instead of serrano. I used a larger onion and one more tomato. Now I boiled then simmered but it didn’t get as red as the photo above. Is this normal or did I do something wrong? How do I get that deep red tone?
