Fresh cilantro would decrease the acidity, Rose, so I’d be careful – maybe 1/4 c. but then decrease the onions or peppers by a couple tablespoons or increase the vinegar by a tablespoon? I like to play it safe – I know many people can salsa that’s full of fresh ingredients, but food is just not worth playing with for me, so I try to go by the book. Personally, if we want cilantro, we add it when we use it – it tastes fresher then, too. 🙂

Hi, I’m gad to see this blog still up and running. I have been canning salsa for years with an old-school hand me down recipe (which we love) but my recipe instructs to put 1 tbsp. lime juice per jar (quart)… not added to salsa mixture. I have tomatoes ‘draining’ tonight and am going to try the apple cider vinegar this time around. I have not read this recipe before and an curious the taste comparison… I have read that it is safe for water bathing, I’m thinking the time would remain the same.

Back to the salsa…I was asked to do a little tutorial on some salsa canning basics for a church activity. Attendees were asked to bring salsa they’ve made fresh or canned to share for refreshments after the activity. I was pleased to see that the salsa I brought (this recipe) was the first one gone. I kept hearing people ask “which one is Katie’s??” That sure makes a girl feel good!

Hi Kari. The tomatoes in the can are small to medium sized tomatoes, and there are plenty in there. I tested the recipe using canned, not fresh, so I can’t say for absolute certain, but my best guess would be to start with 8 small to medium tomatoes and make the salsa as directed. Taste it and use your best judgement as to if it needs more tomatoes or not.

I love me some fresh salsa. It’s probably one of my favourite dips (next to hummus and guacamole). If you’ve ever been to a Mexican restaurant, you might have tried Pico de Gallo or Salsa Fresca. It’s also known as “mild salsa” since it’s less spicy compared to other types of salsa that might set your mouth on fire (I have to admit I like those too). This is exactly what we will be making today.

Start with 5-6 pounds of washed tomatoes. I use about 1/2 slicing tomatoes and 1/2 paste tomatoes- the slicers have some of that great flavor and the paste tomatoes add thickness, so I like to include both.

Tomatoes are a borderline acid / low acid fruit (see this page about tomato acidity for more information) – adding lemon juice helps, processing according to the specified times (determined by the USDA) in the water bath canner almost eliminates spoilage.  You should boost the acid level of the sauce, by adding 2 tablespoons of lemon juice or 1/2 teaspoon of citric acid per quart of sauce. (or half that, for pint jars)

Also, an added trick to speed up peeling tomatoes (and make it sooooo much easier) score an “X” on the bottom side of your tomato before blanching. After you cool it, you can peel it like a banana from the bottom.

Cool, thanks Terri. It is a winner recipe https://great-salsa.com/category/chiles/ sure. You can use citric acid instead, but I’m not of the ratio. Keep in mind that the lime juice doublse as a flavor component. I prefer fresh squeezed for that, but do what you prefer or have on hand. The thick and chunky part will stay the same regardless. Hope you enjoy!

OR use a food processor like I do now as described here and pour from the processor to measure 7 cups. There are both large and small tomato chunks since the processor isn’t perfect, which is fine with me.
