Sadly, my search for the best recipe wasn’t at an end, though. We found that the salsa wasn’t very spicy and when I took the time to look at the ingredients of bottled lemon juice (it must be bottled – fresh lemon juice doesn’t have the consistent acid level for canning) I saw that it’s full of preservatives! Great. I’ve got all these organically grown vegetables and I’m adding preservatives. Double boo.

This made some damned good salsa! We had a salsa competition at my work and I needed a recipe that would make a lot of salsa. I had only made salsa once before and it didn’t turn out as good as this recipe. I omitted the yellow bell peppers simply because I didn’t care for them. I also added a small amount of sugar to give the salsa a bit of sweetness. This salsa won the competition!

Since I’ve gotten this book I’ve canned some Homemade Pear Butter because pears were on sale for 50 cents/lb. I’ll post about that recipe later, but it is GOOD. I’ve got so many recipes marked in the Ball Complete Book of Home Preserving book that I want to try. It’s a great resource and it really makes home canning feel less overwhelming.

Hi Sherell 🙂 I’m glad you like the flavor! I always make it as written, so I can’t say for sure, but you could always place a mesh sieve over a bowl and pour the salsa through the sieve. Then you can add some of the liquid until you get to the consistency you prefer 🙂

I did a lot of research about the lemon juice, and the reason for bottled is because it’s consistently about 5% acidity- fresh isn’t consistent. I’ve used organic and I’m OK with it, but I’ve not read anything OFFICIAL about it. I think if it’s consistent, it should be OK, and it’s certainly better without the preservatives. I know there are canners who use fresh lemon juice, though, and don’t think it’s a problem- but it’s just not worth it to me to go against the recommendations, though. 🙂

I’m sure it would be fine to can as long as you know what you’re doing when it comes to canning. I think there is a specific process you have to go through with the cans. I’m sorry I’m not more help, but I’ve never tried canning. Every year I tell myself I’m going to can salsa, but I never get around to doing it. I would google canning salsa, so at least you know the process. Good luck!

OMG this is so good!! I made a batch at 7am for a bbq this afternoon and ate half of it for my breakfast, so had to replenish it with another can of tomatoes (only had a can of chopped tomatoes left, which worked fine, plus another pinch of all the other ingredients… Amazing! Only thing I had to change was using garlic powder as I had no fresh, still fine. Used 1 green chili and half a red, no seeds, perfect! And 1/4 tsp sugar, as I’m not a huge fan of sweetness. Thank you so much, this is my go to Salsa now :)) Going to make your hummus now too!

I made a double batch last night and my husband can’t get over how delicious this recipe is! It truly IS thick!! I am in the middle of another batch only this time I tripled it. That way I should be done for a year. Thank you SO much for sharing this recipe and taking the time to experiment to find that “just right” recipe! I really appreciate it!

What I’m making today is salsa. The kind they serve in restaurants with chips. The kind they sell in jars. The kind you eat during a football game. The kind that’s replaced ketchup as the number one condiment in America.

Hi Claudia, yes, that is possible. It’s not supposed to be super thick. However, tomatoes thicken up a ton in the fridge as they chill. So place the salsa in your fridge and check it tomorrow or several hours later today and it should have thickened up much better.

I love this salsa! It’s very similar in taste to my recipe, but much simpler. I make it all the time. I never buy jarred salsa anymore, as this is just as good as all the Mexican restaurants around here….even better than a few. The only problem is I could probably eat the whole batch myself because it’s so addicting!

I tried makin b salsa for the first time last year. I used the Ball recipe and it tasted so vinegary that it was thrown out. I want to try again as we eat a lot of salsa. My question is why the vinegar? Why apple cider vs. White or other types? Can that be substituted or a reduced quantity and still keep the pH level safe?

Just made this for our Cinco de Mayo dinner for tonight. It was pretty good! I did have to change a few things. First, I think the store forgot to bag our onion, so I just put in some onion powder. Secondly, my husband picked up the Mexican Ro-tel, which has cilantro and lime juice already in it. I still added more cilantro, as I believe fresh cilantro tastes waaaay better than anything else, but I forgot to add the lime juice. I also only added a 1/4 of a seeded jalapeño.

On adjusting recipes: I know you want to “make this your own,” but with canning recipes you can only do so much. It’s important for food safety to have the proper ratio of acidic to non-acidic foods. The tomatoes are acidic, but the peppers, onions, and garlic are not. That’s why you must add the vinegar, and you can’t really mess with the amounts of peppers.You could, however, fiddle with green peppers and colored bells, or sub some of the jalapenos out for a milder pepper if you don’t like it so spicy. Just don’t be too generous with your helpings and overdo the amounts. That’s one thing I love about this recipe – it gives quantities in cups, rather than forcing me to scratch my head and wonder which onion is “small” and which green pepper fits the “medium” category.See this article on Modifying Canning Recipes and Food Safety for more details.
