Q. My question is about salsa. I was going to borrow a pressure cooker to make salsa this year (for the first time). My grandma told me that I didn’t need the pressure cooker, I could just make salsa using the “inversion” method like I did the blueberry jam. Can I do this?
Salsa very rarely causes problems or spoils (and I’ve known people to ‘create’ their own canned recipes that are WAY out of balance), so no cause for freaking out, Christina! That said, I always like to err on the side of safety, which is why I talk about it and do my best to make sure my recipes are safe. Your ratios sound okay (and any type of vinegar is fine, as long as it’s 5% acidity), since you use more tomatoes which are higher acid and less low-acid things like onion and peppers (did you add garlic?) and your ingredients are all less than half to match your vinegar, so go ahead and enjoy your salsa. 🙂
Jarred salsa can be good, but let me tell you, making it fresh… whew… you won’t want jarred anymore. Fresh blows that out of the water. Plus if you’re into canning, I’m sure you could can this salsa yourself and have it fresh year round 🙂 You could also freeze it 🙂

It has the perfect blend of everything, I have an abundance of tomatoes this year and I am on my 4th batch, I have followed the recepie exact, except for the last batch I made and that was because I wanted a bit more heat. This is just what I’ve been looking for! I have only canned salsa once before, and I was disappointed that the final product turned out so thin. I have pinned this so I’ll know where to find it when tomato season rolls around.
Dip a cold metal spoon into the boiling soft spread. Lift the spoon and hold it horizontally with edge down so that the syrup runs off the edge. As the mixture cooks, the drops will become heavier and will drop off the spoon separately but two at a time. When the two drops join together and “sheet” off the spoon, the gel stage has been reached.
I know this recipe like the back of my hand . It is a well posted on the internet “Annie’s Salsa” , as you have said . You are so right, its the best . I say phenomenal ! Awe …. gee whiz, I don’t like to point out a typo but for the tomato paste addition, it should be to add if one wants a thicker salsa . For canning I use an ” All American ” pressure canner ” , I can fit 19 pints for one processing time . Time is everything for me . I love my “All American” pressure canner ! I can year round, making soups, canning potatoes, pinto beans, northern beans , meats , broth and the list goes on . I too, love canning .
Ball Canning is a good place to start, but I doubt you’ll enjoy the excessively pickled flavor. But you have to learn to walk before you can run. Buy a pressure canner. It’s the only way to make home canned salsa using lower amounts of lime juice as a preservative. Research: Annie’s Salsa for some direction.

I was SO excited when I found your recipe on Pinterest that I went to the store immediately and bought all the ingredients…all except the onion and the cumin. Do you think frozen chopped onions would work? And is there anything I can substitute for the cumin or can I leave it out?? I think I might have to go back to the grocery…lol. Since many of you have asked about a weight measure for the 10 cups of tomatoes, as I’ve been canning the salsa the last few days, I’ve done a little experimenting/research. Basically, I’ve found it varies GREATLY depending on variety. When I used SIX pounds of Roma + every day garden tomatoes, after taking the skins off, lightly crushing, and draining, the yield of tomatoes to use in this recipe was about 2 1/2 cups. When I used TWO pounds of only Roma/paste tomatoes, after taking the skins off, lightly crushing, and draining, the yield of tomatoes to use was a little over one cup. I tend to err on the side of over draining the tomatoes, if anything, so that makes a difference as well. For me, because I usually use paste tomatoes in this recipe, I would plan on around 18-20 pounds (give or take) of Roma/paste tomatoes to get the 10 cups for this recipe…and even more if using tomatoes with a higher water/lower flesh content.

I cut this recipie in half and we don’t like green bell peppers but added radishes. Can I do that? Also, in cutting this recipie in half, I used 3 Serrano peppers and 1 jalapeño. I also forgot the tomato sauce as I just didn’t see it and I added 6 oz of tomato paste. I really cut everything in half but as far as changes I’m not sure if they are safe changes or not because I don’t know alot about canning salsa other than I really want to. I love this recipe because it is hearty and made from all fresh ingredients. We’ve all devoured it this week, including Hailey. If I wasn’t planning on sharing with her, I would have added another jalapeno to kick up the spice factor, which you may want to consider doing.
Chop the jalapeno peppers. If you like your salsa hot, leave the white pith/membranes. Contrary to popular belief, it’s not the seeds that are hot, it’s the white pith that surrounds them. It’s always recommended that you use gloves while handling chili peppers.
I’ve never made salsa before but wanted to after I got some tomatoes from a family member. I just did a search on pinterest and this one came up. I made it today and you’re right, it’s the best damn salsa ever!!! My kids, who are little (6, 4 and 2), could not stop eating it. Great recipe! I’ve never made my own salsa before now but I had a ton of Roma’s from our garden that needed to get used. I just made this recipe and it turned out so YUMMY! It’s so easy, the food processor did most of the work for me and it went really quick. Definitely making this again, maybe very soon with the tomato explosion we’re experiencing 😉 and next time I will add the second jalapeno to make it a little more spicy.
