So pregnant me hears a Mexican song on the radio and immediately envision myself eating dinner at Mexico Restaurant. I decide it’s the chips and salsa I really want and since I’m headed to the grocery store anyway, I decide to try my hand at restaurant style salsa. Found your recipe while in the store, and made it asap when I got home. uncouldnt believe how easy it was! My mind was a bit blown that canned tomatoes are the base ingredient. My only critique would be to leave off the cumin or at least try it in a small bowl to make sure you like it before adding to the whole mixture.
What kind of apple cider do you recommend using? I used Bragg’s and the taste of vinegar was so strong it was nearly inedible. I had to use baking soda to even out the flavor. (I’m not going to can this batch, just because I’m not sure the acidity is correct with my adjustments.) I followed the recipe precisely so I know I didn’t add too much vinegar. Any thoughts?
I made it tonight…tried some off the spoon ….pretty tasty…I added some Serrano peppers and more jalapeños to make it more spicy…hands are burning but my mouth is watering….thanks…used tomatoes from my garden
Making this right this very second. Following exactly to start with..except am throwing in a couple of Thai peppers along with the 4 smallish jalapenos…which I may regret…them things are supposed to be killer hot. I will say, that it is taking significantly longer than the 10 minutes prep time for the water to simmer off (step 2), but I’m in no huge hurry….I have wine.
The vinegar in this recipe is required in order to make this recipe safe for canning. You can use white or apple cider vinegar with at least 5% acidity. White vinegar is clear vinegar made by distilling corn and rye. Choose an organic brand to avoid genetically modified corn. Apple cider vinegar is made from fermented apples. If you do not want to use vinegar, consider trying this Garden Fresh Salsa Recipe and freezing it instead.
I havent tried omitting it, but she was 92 and just KNEW things.. As a matter of fact, I put a teaspoon of sugar in all my canned tomatoes (for soups) as well as the tsp of salt that most recipes require. She did it, I didnt question. Your mom knows best, right??!! Never know it is there.. Trust the recipe..perfect !!

I also really love creamy avocado salsa verde, which you can make by throwing some diced avocado into the mix. I decided to divide my salsa in two and blend one avocado into one-half of the salsa. I’ve included instructions below. Or, serve it alongside my favorite guacamole recipe with tortilla chips for the best of both worlds!
Back again today, triple batch with 24lbs of Green Zebra tomatoes. Got a little lazy about this batch and accidentally discovered that leaving the cut tomatoes covered and draining in the fridge overnight seems to eliminate the need for a cookdown. I’m not even sure I’m going to add the tomato paste to this batch. Also, under cover of “taste tests,” I’ve pretty much managed to have salsa for breakfast this morning. That’s health food, right?
I love, love, love this salsa. I’ve made it several times and it’s been runny, so this time I drained out some of the juice from the can of tomatoes (not the Rotel). Perfection!!! Thank you thank you!
Yowzers! Sweet and hot salsa with tangy mangoes and habaneros. Great with pork, chicken or fish or just with chips. You can omit the habaneros and add red bell peppers for a non-spicy version, but then again, why would you want to? Remember, ALWAYS wear gloves when working with habaneros!
Try freezing abt a cup for a while + try it. I freeze my tomatoes all the time that have only been heated to boiling, Adding 1/2-1 tsp. salt per quart. They do just fine for soups + things without any loss in flavor. I have also canned tomatoes w onions + okra. They do great. I would just try some to see if freezing changes it much. It would be handy for quick cooking recipes.
If you can’t add honey, use a tiny bit of a powdered sweetener. Sweet flavor takes away some of the hot spicy power of the pepper from the capsaicin. Having more pepper in the salsa makes it taste better but the sweetener takes away some of the sting. Enjoy!
I have now made 61!jars of salsa and not sure it will get us through til next summers tomatoes! For the past month my family is eating 2 jars a week, and would eat it daily if I didn’t ration it! I got some extra tomatoes this week that I was going to just quarter and can, but made the last 13 jars instead since they love it so much! I usually share my canning with friends but they won’t get much of this!I highly recommend this recipe. We like the addition of bell peppers!
Glad to see someone knows how to make salsa that tastes like salsa.Most home-made recipes usually taste like tomatoes or are nothing but spicy hot. It’s kinda like you either blasted by the tomatoes taste or burn your taste buds off. Good recipe.Of course,being a Texan I modified it just a bit for the taste I’m used to.

Sometimes I have to remind myself that simple is best. Scratch that—I’m always reminding myself that simple can be better. It’s hard for us analytical perfectionist types to keep things simple. To let them be. To give up control over the outcome and accept that so many variables are outside of our reach.
The problem we had though, was what to do with the Tomatoes after roasting them, Typically other salsa recipes would remove the skin and seeds, but that seems kind of meaningless in this instance. Could you share your method here please?
There are some other interesting ingredients in here as well. She adds poblano peppers with the jalapeños, chicken bouillon powder instead of salt, and 1 cup of canned rotel tomatoes. She also adds chopped fresh cabbage, which I omit. The recipe will make a large bowl. You can half it if you want, but what’s the point? You’ll eat it within a few days. And if you’re making it for a crowd, it will be gone before you even serve the rest of your meal. My husband and I agree that it tastes even better the next day. Save leftovers! ENJOY!!!!
This ones a keeper! Just started a garden this year and I didn’t know what to do with all the tomatoes and peppers I got out of it. I don’t cook often, didn’t know anything about making salsa or canning, but this recipe is easy to follow and if I can do it, anyone can. Expect a lot of complements on it when you share it! Thankfully my family also appreciates the sinus-clearing powers of big, bold-flavored salsa as much as I do. We love this salsa so much more than any restaurant or storebought salsa. Love it when homemade, easy recipes trump all the others.
With the Super Bowl just around the corner, this would be a great easy appetizer to watch the big game. Make sure you’ve got something to serve at half time because this won’t last through the first quarter.
The recipe looks good except for adding factory canned tomato sauce and paste! Ugh. I make my own and would use it. If I didn’t make my own I would simply cook it longer to thicken. You sort of lose the whole meaning of “home canned” if you add factory food in it, don’t you think?
This is SO similar to mine, I couldn’t believe it when I saw it on Pintrest! People ask me to make it all the time. I’ve never used the honey (but I’m going to try) I roast my garlic first & we like it hot so i use a whole jalapeno & a whole serrano pepper but my “secret” ingredient is to toss in a corn tortilla in the blender with everything. I saw that on a Rick Bayless episode. Oh & I add a pinch of powdered chicken bouillon, I don’t know why, I think I saw my Mother -in-law do it! All in all, GREAT salsa!! 5 stars!
Just like it sounds: wash your hands then squeeze each tomato and use your finger or a spoon to scoop and shake out most of the seeds. You don’t need to get fanatical about it; removing just most will do. Another way to do it is to cut each tomato in half, across it, instead of lengthwise. Then just shake the seeds and juice out.

I had some salsa left over and before it went into the pot I tasted it and it was really hot, after I simmered it and got it hot for jarring it got mild… bummer… still good but I was hoping it would keep the heat, especially since I used X hot Hatch peppers..
To blanch tomatoes, place them in boiling water for 30 to 60 seconds, until the skins start to split. As soon as the skins start splitting, remove the tomatoes and place them in a cold water/ice water bath. This stops the cooking so they don’t get mushy, and makes them cool enough to handle for peeling. Slip off skins.
Chill a small saucers in the freezer. Place a teaspoonful of soft spread on the chilled saucer and place in the freezer for 1 minute. Remove the saucer from the freezer and push the edge of the spread with your finger. A mixture that has reached the gel stage will be set, and the surface will wrinkle when the edge is pushed.
