I just tried this recipe for the first time and it is delicious! My husband and I love spicy so I added 4 habaneros to the batch (seeded of course). It has a great kick but not too much. I also added a bit more cilantro because we love that flavor as well. It turned out great. I will vary the amounts as I continue to use this recipe. Thank you for sharing!

Thank you for the recipe! My friend and I made it in an evening and we have a neat tip: after roasting and peeling the tomatoes, put them in a salad spinner to drain out juices! Works super well and you can freeze the juice for using later in soups, stews, chilli, etc!

Into a food processor fitted with the blade attachment; add 1/2 of both a coarsely chopped red and white onion, 1 large coarsely chopped garlic clove and 1 to 2 jalapenos, depending on the level of spice you desire. I’m a 1 medium jalapeno girl, I keep half a jalapeno with seeds and ribs intact and remove them from the other half. To me it’s the perfect amount of heat… to my husband it could be hotter.

Hi Jami. I was wondering if after eating the salsa all winter you are still happy with the no peel/food processor chopping? Do you not notice the peels at all? I know when I miss a few peels making other things they kind of curl up and float on top. I made this recipe last year for the first time and love it! I have also been searching for a thick recipe and was also using the oregonian recipe so I was so happy to find this one. Thanks!

What an awesome recipe! I had been looking for a salsa recipe for some time, found this one and made a single batch. My husband and I tasted it the next day and we both LOVED it. I made a double batch that same day because we knew that we would use that single batch long before fresh tomatoes were in season again. In the second batch, I cut back just a little on the cumin seed (3/4 teaspoon) and added an extra teaspoon of kosher salt. I have shared this recipe with my nieces, who then shared the salsa with their families. A new family favorite! Thank you so much Jothan!

Just found you via Pinterest and the lovely picture of your salsa, which I made as soon as I got home from the store.I just noticed I forgot to add the honey…will remember the next time. Not only is it delish with tortilla chips but also over scrambled eggs, chicken, fish, grilled veggies, tacos, burrito bowls, mixed into cooked quinoa or beans. Plus now is the time to make this stuff! Homegrown, ripest tomatoes are the best here but if you’re like us and still recovering from cold winter and non-existent spring and homegrown tomatoes are still couple months away, then use any other sort of juicy tomatoes that you can get your hands on.

Homemade Salsa (Canned & Fresh OK): For those of you who are new to making salsa or blanching tomatoes…you’re in luck! I just made a batch of salsa today, and I took pictures so I can give you the play-by-play. Recipe found at Call Her Blessed.

Looks like an awesome recipe; we’re trying it tonight. All of our garden tomatoes and peppers are ready for the task. I noticed that some folks were wondering about the tomatoe pounds to cooked cups conversion. I found out that 2 1/2 pounds (1.1 kg) tomatoes = 3 cups chopped and drained fresh tomatoes = 2 1/2 cups chopped and cooked tomatoes = 2 1/2 cups canned tomatoes in puree or juice. You can also substitute apple cider vinegar (ACV) for white vinegar. We mixed up the peppers too, since we like it spicy. Looking forward to a positive result. Plus, tomatoes, at least, are healthier when cooked because heat releases the lycopene. So I’m more than happy to preserve fresh produce in my canner when it’s salsa, of which we can never have too much. (If you’d like to know more about fermentation, however, HERE is an amazing eCourse on the subject with almost 2 dozen multimedia lessons.)

Using an immersion blender or food processor, carefully purée the salsa to a smoother consistency. In a food processor and working in batches, pulse 8 – 10 times and when all finished, return to the pot. Taste for seasonings and if too vinegary, add another tablespoon or so of sugar. If too sweet, add a little more vinegar to balance. Bring blended salsa back to a boil and simmer a few more minutes.

Canning salsa is something I do every year but I don’t get too adventurous with my recipe since I know everyone in my family enjoys it and it’s easy to make. This year will be different though because I’m going to try a new one or two from this list just to see how they go over.

Thanks for sharing your recipe. I’ll cod salsa recipe to compare the two and see what the differences are. If yours looks milder I may give it a try.

Cook the salsa until it’s nice and hot (boiling), and then follow the instructions I posted yesterday for canning tomatoes to fill and process the jars. If it seems too juicy, you can always boil off some of the water first.
