Haha… I love it! I will definitely try lime next time, but I don’t think my husband will let me leave the cumin out. He loves that stuff. Glad you enjoyed the recipe and be sure to try it again when you can get garden fresh tomatoes!

I have done salsa for quite a few years but I never cook mine down I just bottle it fresh into hot bottles and then water bath it for 30 minutes. I haven’t had any trouble with my salsa or any one die but now I am concerned because every receipe I read cooks it down. What do you think

My brother made this for thanksgiving for a potluck.  I have canned many salsas over the years, and this was the best I’ve ever had.  Thank goodness the weather is cooperating  in southern Ontario and romas are still very plentiful for picking. I canned these in a water bath without a problem. Throwing all my other salsa recipes away… And THANK YOU for the broiler skinning method!! I’ve been telling all my friends about it! Way easier than using all that water.

Let’s take this salsa, for example. It was originally a component in a healthier seven-layer dip concept, but the salsa blew the dip out of the water. One part, on its own, was so much better than the other six combined. Then, I made it a couple more times, with the same ingredients, but each time, it tasted a little different.
