Sure I love Pico de Gallo, trust me when I say I eat it with a fork for lunch some days (just ask the Mexican stand at my farmers market, what I eat for lunch most Thursdays, lol), however this salsa?? This salsa I can drink with a straw. I haven’t…yet, I literally think about doing just that!

Good morning, Jami. I made your salsa recipe yesterday. One batch only as still waiting on tomatoes to ripen BUT I got 11 half-pints and 1 full pint. Oh my goodness, is it wonderful and very pleasing to look at, as well! 🙂 Love the flavor and the consistency. Tho 8 jalapenos sounds like too much it really isn’t that hot – just a little tang – very nice. I do have to ask why, oh why, in reading your post did I feel impervious to the hazards jalapenos could wreak on your skin?? I ask myself that. Holy Moly – next time I read something you write I will take FULL heed. Side note: I googled and read that rubbing alcohol (among other things) can be used to help neutralize the burn, topically only, of course. Do NOT rinse it off. Again, thank you for sharing such a wonderful, yummy recipe!!

Tomatoes – about 15 lbs (yes, quite a few – you remove the skins, seeds and a lot of the water, so it takes a lot to start.) You’ll need about 3 quarts of prepared chopped tomatoes. This makes about 8 pints of salsa! If you only want to make a single jar, see this page instead!

Bring it to a boil and then reduce the heat to low. Simmer for 15 minutes until it has taken on a deep red color and has more body. Looks good, doesn’t it? The tomatoes need to be very ripe for the sauce to take on the deep red color in the photos.

COMBINE tomatoes, green peppers, onions, chili peppers, vinegar, garlic, cilantro, salt and hot pepper sauce, if using, in a large stainless steel saucepan. Bring to a boil over medium-high heat, stirring constantly. Reduce heat and boil gently, stirring frequently, until slightly thickened, about 10 minutes.

I encourage you to try it if you would like a healthier option for seasoning your food that hasn’t been through some terrible processing and adding of chemicals or additives. They also sell unrefined Chancaca sugar that has been produced from molasses, instead of going through an extensive process like most sugars on the market. I’m dying to try that next! The salsa will be thinner at first, but will thicken up after a few hours in the refrigerator, due to the naturally occurring pectin in the tomatillos. If you’d like to make creamy avocado salsa verde, let the salsa cool down before blending in 1 to 2 diced avocados (the more avocado, the creamier it gets).

Mince 3 cloves of garlic. You can throw them in the processor, too. (Yes, there are 6 cloves here. I’m not throwing caution to the wind, remember I’m doubling the recipe, in order to get 10 to 11 pints out of each canning session.)

I usually run my jars through the dishwasher and try to time it so they are done and warm when I’m ready to fill jars. Never fill cold jars with hot salsa! The difference in temperatures may cause the glass to break.

My understanding is that if you leave the tomatoes and acidity (vinegar and such) the same, you can modify the peppers according to heat (just don’t add significantly more or less than the amount called for).

Hi Alicia – I use about 10 pounds of tomatoes, give or take, which often yields 10 cups of tomatoes (after they’ve been peeled, chopped and drained). I hate throwing out that exact pound amount because so much depends on the variety of tomato and how long they drain, etc, but it’s a good starting place.
