This is soooo good. Got this off Pinterest and made last night. It’s almost all gone. I’ll be eating salsa a whole lot more now. I added more garlic (2 large cloves), a bit more salt and a really large jalapeno with seeds. It’s perfect! Thanks so much for this awesome recipe. I used to go to Austin Grill just for the salsa and now I don’t have to do that anymore!

I tried makin b salsa for the first time last year. I used the Ball recipe and it tasted so vinegary that it was thrown out. I want to try again as we eat a lot of salsa. My question is why the vinegar? Why apple cider vs. White or other types? Can that be substituted or a reduced quantity and still keep the pH level safe?

Add all of the ingredients to a food processor and blend until desired consistency. I like mine more saucy, than chunky. Serve either at room temperature or slightly heat up. It is delicious warm! Serve with chips, tacos, omelettes or burritos!

Hi, Sommer, I was pointed to your blog by Cory Kowalski. I immediately saved your detox soup recipe AND the salsa one. I love salsa and love making it, but I can’t eat as much as I’d like to because I have kidney disease (and tomatoes aren’t good for me). I am going to try making a salsa with an extra dose of tomatilos, substituting them for some of the tomatoes. I’ll let you know how it comes out. BTW, I can’t find a ‘follow’ button on your site — except pointing to Pinterest, which I know nothing about.

Rachel, you can substitute jalapeños for the serrano chiles and get great results. Try the recipe with 2 jalapeños and if the salsa is too spicy reduce it to one. Removing the seeds and veins from the chiles reduces the heat too. Cheers!

Toss the squeezed (Squozen? 🙂 tomatoes into a colander or drainer, while you work on others. This helps more of the water to drain off.  You may want to save the liquid: if you then pass it through a sieve, screen or cheesecloth, you have fresh tomato juice; great to drink cold or use in cooking!

I’ve been searching for a thicker than normal salsa recipe, and I think I’ve found it. What I may attempt at changing is the simmering the tomatoes for 90 minutes on the stove(that’s brutal in the heat of late summer). I think I’m going to try pressure cooking them for 45 minutes instead. This is how I make my lip-smacking marinara, and I am betting this is going to make for tasty salsa as well.

I have been using your recipe for several years now. We love it!!! My husband especially. I usually can between 35-50 pints of this salsa. I grow my own tomatoes, onions, peppers, jalapenos, and garlic. Can’t wait to make some more soon. I am down to 3 jars from last year. I need to start rationing!

Hi Jeri Lou! I mentioned that step in the pictured instructions but left it out in the recipe box – it’s now added 🙂 There has been a lot of discussion about canning and bacteria in some of my other canning posts. The fact of the matter is, bacteria cannot survive or form in an airtight space. Still, it never hurts to take extra precautions.

This is so good. I thought I had my go-to recipe but this has now replaced it. I love how you don’t have to simmer the salsa all day before you can it. I also like your way of removing the tomato skins. Thanks. 

Thank you for a great salsa recipe!  I’ve made it twice now.  The first time I did vinegar as stated and it was great but the vinegar taste was a little strong….it will still be gobbled up!  The second time around I researched the USDA guide for tomatoes and found it said you can add 1 tablespoon bottled lemon juice to each jar as you fill it!  Now to test them and see which we like better!

Does it not look like the texture of the salsa in the pic? Also, did you use the grape tomatoes like I have listed? Different tomatoes have different water levels, so that could be it if you used a different tomato than I used.
