The vinegar is needed for food safety but you could try subbing in bottled lemon juice (I don’t love the flavor which is why I stick with vinegar) or search for a recipe with a different lineup of ingredients. Sorry you didn’t love it; if I were your neighbor, I’d come take it off your hands. My husband would be thrilled! 🙂

Be very careful while handling the chile peppers. If you can, avoid touching the cut peppers with your hands. (I often use disposable gloves or hold the peppers with a plastic sandwich bag.) Wash your hands thoroughly with soap and hot water after handling and avoid touching your eyes for several hours.

I cut this recipie in half and we don’t like green bell peppers but added radishes. Can I do that? Also, in cutting this recipie in half, I used 3 Serrano peppers and 1 jalapeño. I also forgot the tomato sauce as I just didn’t see it and I added 6 oz of tomato paste. I really cut everything in half but as far as changes I’m not sure if they are safe changes or not because I don’t know alot about canning salsa other than I really want to. Can you please help me out?
Haha, always worth the question! I just don’t know about pH levels and food safety of using canned so you might try googling to see if any of the main canning experts (Ball, NCFHP, etc) have anything to say about it.
Wonderful flavor. It took way way to long to peel and core tomatoes so I cored with knife tip stem end blanched then snipped into tiny pieces. It took me maybe 20 minutes while it took me nearly two hours your way. Otherwise great recipe thank you so much. Just wanted to let others know if they were having problems like me
I just made this last night & I cannot stop boasting about it! It is absolutely amazing! I did make a few changes, like using serrano peppers instead of a jalapeno, and used two large tomatoes instead of a can of whole peeled tomatoes. Also, after adding the diced tomatoes, I didn’t pulse it anymore.. I just stirred the tomatoes in for chunkier salsa. I added garlic salt as well to taste. I cannot believe how simple this is, and how great it tastes! Thank you for sharing=)
I would give this recipe a six if there were that many stars. We downloaded it 2 years ago and my wife cans it every year. We still run out too fast.Each year she has made it hotter and hotter and it is wonderful. Thanks very much.
